We arrived in Yakima on July 4 and found most restaurants closed and their workers home with their families. One exception was the 8th Street Bistro at the Holiday Inn. We did not expect much but were very pleasantly surprised by a nice selection of wines generously supplied, friendly wait staff and a meal of grilled salmon that was among the best we have ever had. When I complimented the chef, Carlos, he explained one secret: to cover the salmon with a shallow pot on the grill so that it interior cooked at the same rate as the exterior. The Cowiche Kitchen down Yakima Avenue is more stylish and offers great service but for a quiet and enjoyable meal, the 8th Street Bistro is a good choice.
