From it's days as a food cart in downtown Montpelier, it's come up in the world. The fun of Wilaiwan's (aside from us locals trying to figure out how to pronounce the name), is that you never know what's going to be on the menu. When you arrive, there are a few dishes offered that day. Pick any, they're all going to be delicious. But be prepared for them to be spicy. It's a bit of a roulette game if you don't like spice, and that's the biggest complaint that I hear about the food. But if you like spice, variety and tasty food, spin the wheel. You'll be pleasantly surprised by the taste and value. Don't plan to eat here as there are few seats. Instead, take your take-out down to the statehouse lawn or church park and enjoy it there.

By noon the line usually goes out the door, since so many of us who work downtown go to Wilaiwan's to get our lunch. But it moves fast. Authentic Thai, not so Americanized, and fresh, flavorful ingredients. There are always three dishes to choose from, usually including one soup -- posted on a sandwich board outside as well as inside. I think the crispy pork with Asian greens when it's in the rotation is to die for. Be forewarned, it's authentically hot with chilis -- usually there's one dish they can make mild, but not always. The other thing I love is the joy with which they make and serve their wonderful food. One feels nourished and blessed.

Do not expect a big menu. They have a few items each day and it changes from week to week. It is all good, at least if you like strong fresh and hot flavors.

Do not try to go right the end, they cook until they run out and are done for the day. Also bring cash!

It's worth it!

Trigger Warnings: I love authentic Thai food and I love chilis.

Stopped at Wilaiwan's Kitchen for the first time today. There are a half dozen Thai "themed" restaurants in this area of Vermont, so Wilaiwan's can be compared to other choices.

1. Wilaiwan's has a much more limited menu than some of the fancier sit down places. That is not a drawback. I could eat the same meal everyday for a month and not lose interest.

2. The wider menus at other places lead them to tend to get into a potpourri of other Southeast dishes (e.g., crab Rangoon) that are not authentically Thai. Wilaiwan's dishes seem very authentically Thai to me (based on a half dozen trips to Thailand over the years).

3. The ingredients in Wilaiwan's food were incredibly fresh. As it's just one big room, I could see the cook chopping up the fresh vegetables as we ate. This is key, since one of the aspects I like about good Thai food is that each dish typically presents a rainbow of flavors that you can taste individually (it it's fresh).

4. Yes, it's normally spicy (but not as hot as one might find in Bangkok). As each dish is prepared to order (a 3 minute task), they can easily leave out some or all of the hot peppers & sauce, to your taste. I found the flavors perfect.

It's no frills and service is fast. I'll definitely go back for a Thai hit everytime I'm in Montpelier.
