OK - let's get some things straight:
This is West Texas. You are NOT going to get the same quality as you did in San Fransico, New York, or even Houston.
Hibachi is one step above fast-food. Don't order cubed fried steak and complain about the quality/price. If that's what you're wanting, hit Little Panda.
Don't whinge about the price - you are getting fresh sushi in Lubbock-freaking-Texas. That will cost you.

For those that can get past the knee-jerk reactions to the above, you'll like this place. Decent sushi in Lubbock? Yep - it can be done. Jay roll is a local favorite and very consistent. The salmon sashimi is likewise consistent, and they have a above-average selection of sakes. Service is (usually) good, and the staff is willing to accommodate requests. Before you leave - be daring and get the uni (sea urchin). You may just be surprised.

As far as the suishi rolls, the Ingredients are fresh and all the ones we've tried are excellent. Stop in any time we are in Lubbock. Have tried the hibachi grill once and it also is very good. The only drawback is the cost which comparatively is on the high side, but the food makes up for it.

The sushi was phenomenal! The lunch bento boxes were very good. The service was ok, but we had to work for it.

I've been eating at Hayashi for years. The food is always great. Our server was very attentive, almost too attentive, but I won't knock him for that. We showed up early to beat the dinner rush, and as a result, did not have to wait to be seated. My only problem is the price. Almost $50 for two people? That's steak money! We came for sushi, so we sat at a table. If you're coming for hibachi, bring a group. Otherwise, you will have to wait for them to fill the table.

Stopped here for a buisness dinner and what a treat it was. The sushi rolls were AMAZING a must try if your in Lubbock.
