It reminded me of Chopped on TV because the chefs never know what they are going to cook that day until they get there and find out what they have available to work with. They "invent" what they are going to fix that day when they arrive and see what is available at nearby markets or has been delivered to them that day. So it is like each night there is a special, but you have to order the special as there are no other choices. For our meal, they came up with pineapple and lentil soup, mozzarella and mango salad, chicken pot pasta, Barbacoa and potatoes, Moroccan pancake and honey. It was a great experience talking with them and seeing them work together just a few feet away. I anticipated each course with eager anticipation and wasn't disappointed. It was delicious and filling. But get your reservations well in advance because they fill up since there is only two seatings a night with limited seating (about 20 or so).
