Although the prices are a bit high...after hearing the process for making their broth its totally appreciated. You can taste the love and attend that goes into the prep of this healing soup. Also, if you are fan of the rare beef Pho this is the place. Your super thinly sliced beef is brought to your table on a small plate. This allows for the consumer to add his or her beef to the soup themselves and cooking it to the level of likeness. Typically, when the rare beef is placed on top of the Pho and brought to the table it has cooked past the point of a rare quality. The Green Papaya Salad is something you MUST try!

If you are open to new and fresh flavors in a different style to what you usually get , this is a great experience.
The food is tasty, without the restaurant problem of an over abundance of butter, salt or sugar.
This is real flavor from real food.
It is a compliment to the culture, like being invited into their home.
Thank you and we will be back.
(Food prices at the shore are always higher and these ,IMO, are reasonable for the attention given for this wonderfully tasting food !)

Having Vietnamese family members, and having eaten at Vietnamese restaurants in a dozen cities, we were excited to see Minh's addition to the Rehoboth-Lewes restaurant scene. Sadly we came away disappointed. But let's start with the good news. The host was friendly and our server, Chris, was very good - arriving when we needed him and absent when we did not. The décor was modern and much more attractive than in most Vietnamese restaurants. The room was relatively dim with nice pools of light at the tables and soft Vietnamese songs in the background.

We shared the egg rolls - fresh fried with a sweet/spicy dipping sauce. But two regular size egg rolls with salad garnish for $8! We know what egg rolls cost to make!. Each of us followed with a bowl of pho. Many restaurants serve large bowls of pho but offer small bowls also. Minh offers only very large bowls, the volume of a child's bucket for the beach. To our taste the broth seemed dilute, not the rich, complex flavors we are used to. The eye round was nice but the beef balls were tough, like undercooked sausage.

Dinner at Minh's is not inexpensive. With tip, we paid $51 for the shared appetizer, pho with beef balls and pho with eye round and beef balls, plus one Coors Light. After we had left the restaurant I noticed that I had been charged $6 for an imported beer instead of $4 for a US beer. Perhaps that's a small thing, but it left a bad impression. BTW having the cash register in the kitchen was an authentic Vietnamese touch - made me grin!

I will return to Minh's, but I will wait a year to give him time to get himself organized.
He currently has too many staff. Three servers serving four tables plus at least three cooks in the kitchen! Excess staff may account for the high prices. I wish Minh good luck. I hope he does not try to Americanize the food. Vietnamese food is a wonderful blend of Asian and French cooking and has the potential to be very successful in the Rehoboth-Lewes area.

spring rolls S1are so fresh and clean with the special sauce, and the egg rolls S2 with the fish sauce succulent, and then for the entre Pho P6 I get the chicken with all the herbs the broth is to die for. You can get all this to go it travels well, you won't feel stuffed and bloated this healthy filling way of eating should be shared by all, definitely not junk food. Try it, I can't say enough about this gem.

The best cure for cold weather's food. Dinner with my family here - very nice services and Minh's Bistro offered One of the best Martini in town.
