Chef Makoto’s introduction to the intricacies of Japanese cooking, especially sushi, began in his hometown of Nagoya, Japan. At the age of 15, Makoto began an apprenticeship with Sushi Master Makoto Kumazaki; his study continued under the tutelage of legendary Sushi Master Chef Shinichi Takegasa. After ten years of training in Japan, Makoto moved to Washington, D.C. where he began to work closely with Iron Chef Morimoto and was soon asked to assume the Head Sushi Chef role at Morimoto New York and Morimoto Philadelphia. In 2005, he was recognized by the James Beard Foundation for outstanding contribution.

Stopped here for lunch today and was blown away. Beautiful rooftop setting with comfortable sofas and regular tables. I had the sushi roll bento box ($18) - miso soup, a watercress salad, a bowl of special fried rice and a california roll. The sushi rice was cokoed to perfection and the combination of flavours exceptional.

I wanted to visit Makoto for awhile so we went for a nice dinner in the outdoor terrace. The setting and lighting are gorgeous, also great selection of lounge music. Service was good, the waiter made great recommendations according to what we told him we wanted. Our choices were spicy tuna crispy rice (nothing special), the hay smoked albacore (amazing) and sushi sampler with the chef's selection of nigiris . The smoked albacore was delicious, fresh and the spicy flavor was perfect. Unfortunately, the nigiris did not meet our expectations. For the price, we expected the seafood to be more fresh. The only one that we loved was the Unagi (delicious, reminded us to what we've tried in Japan). The ikura nigiri was good too. Drinks were Ok. I would perhaps return for lunch to try the bento, or if someone celebrates something there, but probably not by myself.

Sensational Japanese and fusion cuisine, intricate and modern presentation of dishes. Service is out of this world. Wonderful Toró (fatty tuna). Wonderful mushrooms in a delicious suave. Delicious baked cauliflower dish, Sunomono salad with seaweed served on a frozen stone, sensational fresh wasabi grated at your table straight from the root. Pictures here of some of the dishes we enjoyed most. Reserve in advance.
Don't miss the facade of the building, which is a sculpture by the famous Carlos Cruz-Diez.

This is the best Japanese cuisine in Panama, in fact one of the best that I have had in the entire world. This restaurant takes food preparation seriously. I was impressed more and more as the night progressed, from presentation to taste, my mind and taste buds were completely blown away. Truly exceptional.
