Nikkei food is a treat because the ingredients go well together in my opinion, And I can't get it easily where I live (New Jersey). So thankful we remembered to get sushi in Cusco, and their Acevichado roll is one of The best I've had (including those in Japan and HK !!) : shrimp furai (deep-fried), avocado, acevichado sauce (mayo, + tiger's milk?). Order it with a very good pisco chilcanos. Their menu explains the surprising, fascinating, and special history of Incans and Japanese. If I am lucky to come back to Cusco, I will definitely revisit and order everything else on the menu!!!!
