In a nutshell I would mostly recommend this place as terrific to come for a drink. Ambiance and service is superb. If you are a foodie you will be disappointed. Don’t get me wrong food is very good but not exceptional. The other reviews are correct in that it’s a very romantic place in a hotel so it’s a great experience. But purely from a food perspective if you are picky like we are, it will be very good but not 5 stars good.

Even if you are not staying at The Jefferson Hotel, Quill an upscale lounge and cocktail bar is a must. The food is creatively prepared and delicious. The wine list is extensive; the classic and signature cocktails are creative and expertly executed. The beautifully designed and decorated bar/lounge with its dark woods provides a relaxing retreat; a series of antique maps in the bar lounge illustrating the wine tour that Jefferson took through France, Germany and Italy help to create that relaxing ambiance. There is also a wonderful outdoor patio and from 9:00 pm Tuesday to Saturday there is an in-house pianist playing in the lounge. We loved the food, wine/cocktails and the excellent staff that we ate there 3 times. The Salmon Tartare with pink grapefruit, avocado, crème fraiche and fish roe was beautifully prepared and delicious. Other dishes that were creatively prepared and delicious were the Bison Sliders, Chilled Shrimp Cocktail, Artisanal Charcuterie, the Maryland Crab Cakes and the Ahi Tuna Melt Panini. Complimenting the food and wine, was the excellent staff. The level of service is definitely 5-star at Quill. We especially want to thank Maurice, Frank and Kevin for their friendly, knowledgeable and professional service. They made our stay at The Jefferson Hotel an enjoyable and memorable one and we look forward to our next visit.

Two of us enjoyed a cocktail at the bar first, enjoying watching the bartender stir two drinks at once while pouring ingredients for a third. The drinks were excellent. And then we moved out to the patio, where we enjoyed crab cakes, a mediterranean platter and black bass, plus a fine bottle of wine—and then the Everything Chocolate dessert. Altogether, elegant, delicious and priced appropriately.

With cocktails averaging about $20 it's a bit pricey. However, for entertaining a client or just meeting a friend for a couple drinks the ambiance makes up for it. The live piano sets a mood that makes you feel a thousand miles from DC.
