Hill Country's brisket, sausage, ribs and other meats are smoked low and slow over Texas post oak. The barbecue is served in butcher paper, counter-style by the pound, with traditional trimmings.

The place smells like smokey hardwood so I was drawn to it like a moth to a flame. I've been here several times and it rarely is disappointing. I like the brisket, turkey and the hot links. There are stations you go to and get your food which they weigh. It's not fancy and the service for drinks can be a little lacking but you won't go away hungry!

Not sure how anyone could give less than 5 stars!! It’s a “serve yourself” atmosphere with the most amazing meats and even sides. Mac and cheese is savory, gooey, and to dieeee for
Prime rib was juicy and tender, sweet potato mash was so flavorful and delicious. Pleaseee try the cornbread pudding!! Seriously the best
Get Nancy as your server and she will serve you great!!

Took my son to DC for some quality time. He is a full-blown carnivore and lover of all things BBQ. I saw this place on Tripadvisor and decided to check it out.

The ordering process is a little unorthodox - you actually walk to the back of the restaurant to order your food directly from the guys pulling it off the smoker pit, then to the folks handling the side dishes. But it's super-efficient and in no time your back at the table enjoying some Texas barbecue goodness!

Work it out to be at Hill Country when they have live music, just makes a great experience even better!

Visited Hill Country for a late lunch on a Saturday afternoon. The dining room is very large so we had not problem getting a table. The decor is very "Texas" - barn board walls, wood floors, exposed timbers.

The server was attentive and got our drinks but didnt take our food order. We had to go to the serving counter and order/pickup our food kind of like a deli. The food was very good - the meats were lean and had great smoky flavor. There were a couple of BBQ sauces on the table.

I thought the prices were a bit high, even for DC, considering that we had to serve ourselves. But I would probably come back if I were in the area again.

Great Texas barbecue outside of Texas. Everything is super expensive but that’s just that part of the country in general. The sides are ok - quite frankly the meats are where it’s at. And the dessert - at least the red velvet cake. OMG the best EVER! Icing was perfect without weird cream cheese flavor - and so homemade cause no fakey aftertaste. The cake was moist and absolutely awesome! So worth the price and the slice is WAY too big for an average person! I would definitely eat here again!
