Silvester’s offers an immersive dining experience featuring a creative, experimental take on contemporary Australian cuisine. Our menu showcases locally sourced all-Australian fresh produce with an intriguing and unexpected blend of flavours. The food is complemented by a vast selection of over 100 premium Australian and international wines. History: Silvester’s unique story is inspired by the rich history of this very space. In decades gone by, one of Sydney’s finest butchers, the Silvester Brothers, served up local cuts from within these walls. A restaurant inside a hotel, not a normal location but nestled between a sports bar and a cocktail lounge- you can't go wrong. The open kitchen and high glass ceiling gives space to the modern classy design. The expertly cooked food was delicious and exceptionally presented. Staff were knowledgeable and professional yet friendly making the atmosphere welcoming and comfortable for a friends meal out. Starting with the spanner crab and the special of lobster fish and chips to share, perfect matches of flavours in both dishes. For main we shared the butchers cut which was cooked to perfection, tender and flavoursome with roast potatoes and topped with rocket provided a delicious dish. Continuing the reef theme we had the tooth fish, again cooked so the fish was flakey and tender with mouth watering flavours and garnish complimenting the dish. Finally we finished with the chocolate and espresso and the grilled pineapple desserts, the espresso being my favourite- not only did the dish look amazing like a castle but also the flavours provided the perfect sweet end to the meal- the grilled pineapple an amazing mix of sweet and savoury allowed for a pleasant surprise. The mix of sweet pineapple and nitrogen mixed coriander provided a cool inventive twist to the dessert. Finally the wine, great recommendations from staff, and we enjoyed every drop! Overall an amazing and fun experience with outstanding food. Perfect evening.

I was invited by a guest at the hotel for dinner, probably wouldn't have dine here otherwise. The service was excellent, very friendly and attentive. The ambience and food was very nice too, great evening.

Lobby restaurant of Marriott Sydney Harbour and the food is good. Wine list not extensive but the Yalumba seriously hit the spot. Tuna carpaccio was outstanding, soft and yummy.

Linguine with prawns good, so was beef fillet, but the star was the tuna then the cheese board with homemade flat bread etc, scrummy!

Gone is the tired old foyer decor and in with a hip open kitchen, with additional Bistro centred cooking stations and an interesting new menu. The Hervey Bay scallops sound okay on the menu but are beautifully presented on a dark dish. The combination of the seafood with creme fraiche, black pudding and nori cracker and some salmon pearls combines perfectly in an enticing blend of flavour and texture.
Cape Grim short rib is packed with sticky gooey oozing flavour.
On my next trip I had the wood fired spatchcock with chipotle corn and sides, described as a small main but this was one big 400 Gm bird. It was hard not to have the rib again! With a couple of sides this is very filling but juicy.
Good helpful staff seem to enjoy working here. A good concise wine list weighted to $100+ wines but food friendly in direction.
The downsides were the (only $4) grilled sourdough is far too big for one (or most couples) and the music was too loud on the quiet night although would have been appropriate if the room was full. A big positive move for Marriott Sydney.

This is at the lobby of the Marriott at Circular Quay - next to the Opera House. Great restaurant, wide selection of food. The kale pancakes with avocado were fantastic. Great Service too.
