In the countryside and surrounded by olive trees the beautiful old masseria is located. The inside is very rustic and could need some updating and it feels very empty, This is primarily because the hotel is used by larger groups of people having only breakfast and the leaving. It has a fantastic pool but there is absolutely nothing to do at the hotel or nearby.

Room tip: Ask for a room on the 1st floor view a view facing the pool

Agree with a lot of the previous reviews..
The good:
Location. Not on the beach but convenient for All there is to see around and only 10' drive to Torre Cane and it's nice restaurants.
The swimming pool is huge and beautifully set in the middle of the olive grove.
Breakfast is with fresh ingredients. Still salivate and miss the cheese selection :)
The rooms were big and comfortable.

What can be improved:
As mentioned by others, the staff is friendly but seems like most of them need a little extra training.
The bar had run out of gin! (Bit weird for a 5*!) and the barmaid was not the friendliest
They also ran out of towels one day at the pool. Again not a major drama, but not expected from a 5*
I had to wash my face in the bidet as the sink's tap stopped working and I had to ask twice for it to be repaired

Whilst we were there, there were quite a few maintenance people busy repainting and repairing. So it gave me the impression that the hotel had seen better days, had lacked investments or a few years and now the owners were playing catch up to bring it back to where it should be.

So overall a great place where I would go back but needs a little polishing.

Amazing location surrounded from olive three and peace.
Huge swimming pool, very convenient location 20 min away from Polignano a Mare, Alberobello and all the attractions.
Huge size of the rooms and very clean, impeccable breakfast.
Front desk very very nice but a little new, with not too much experience and not always on top of all situations.
Great value for your money.
Definately Recommended!

Just left the place, already miss it!! Beautiful hotel converted from authentic old property in the middle of olive tree plantation. Has all amenities the lux hotel should have. Different places to rest and hang around inside and outside, fantastic outdoor pool with salted water, all rooms with the nice view.... Staff is very friendly, they want to please you and address your needs. Now, all amenities are a bit worn out... Staff is nice but not professional... They come across friendly but almost as they are not trained... nobody waits for you at arrival, little details are not there.. no cold water when you need it, and than you need to tell them to bring you ice instead!!! service is slow, coffee is taking 15 min to bring and is watery... overall you need to guide them what to do, and than they do it. However, if you are relaxed and positive, you will have fantastic experience in this friendly place where you can easily feel as at home... Highly recommend.

Del Cardinale is simply one of those stand out vacation properties that really takes your breath away.

Whilst at the hotel, I was reminded of one of those price comparison site adverts where they simply showed guests happy expressions when the opened the door to their holiday hotel … you never saw the hotel or the room … just the intense happiness in the couple or families faces.

Del Cardinale does this …and then you get even more satisfaction when you think this amazing super 5 star property (set in an enormous plot with one of the best pools I have ever used at a hotel) costs less than a small room in London.

The value is outstanding, the food is great, the staff (although English is a little hit and miss) attentive and want to make your stay a real pleasure.

The hotel never feels crowded, since there are so many areas to relax and enjoy the sun, the pool and beautiful surroundings (from the furniture to the beautiful trees and grounds.

The staff at reception and the management should be highlighted for their outstanding service … nothing is too much for them.

You really do feel instantly relaxed and in a proper holiday mode.

An added bonus is that the hotel sits within Puglia … which is Italy’s ascendant region, a place where travellers bored or worn down by the crowds of Campania and Tuscany escape for something a bit less frenetic and real. With the longest coastline of any region in mainland Italy, Puglia is larger than many people realise. It truly is god’s country.

In the north, the spur of land sticking out into the Adriatic is occupied by the balmy microclimates of the Gargano peninsula, a kind of miniature Amalfi with fewer poseurs

Federico Fellini would certainly recognise "the sweet life" or "the good life” if he stayed at the Del Cardinalle.

As a postscript. I went to Puglia and Del Cardinalle for a wedding. Never having been to the area before. I am already planning my next trip to both. Now that is the best recommendation one can really give!
