We finally made it to Cantina de' Corvi. Our friends who live here told us about it last year. So welcoming! We sat in a lovely dining room- very cosy. The owner was very kind and helpful. Again, no problem for vegetarians-my wife was happy. We split an eggplant parmesan for our appetizer. Before it arrived, we were served a complimentary appetizer that was potato, onion, cheese but had the consistency of quiche. The the eggplant which was so delicate you can taste the cheese and the eggplant- neither obscured the other. Again, I asked the owner to choose a glass of wine for me-perfetto! Bean and squash soup for my wife. I had the strangozzi spolentina amazing-perfect flavoring! Then, we had the mussels- excellent broth and flavors. Once again, we began eating before I took a photo or you would have seen the generous portion that is served. And, of course, the Tiramisu; we are on a quest to try Tiramisu wherever we go in Spoleto. This did not disappoint-delicate wafers were to be dipped in a coffee liquor; the tiramisu was heavenly light and delicious. Excellent service! Perfect atmosphere.
