I've been visiting Rioni every now and then and generally love everything about the place. Though, the last time to my chagrin I noticed changes in my favorite dishes. Soko ketse was previously so much more cheesy and rich, now it has more the feeling of stuffed mushrooms summer cottage style. Also Adjaruli Khachapuri has been made a lot lighter with less cheese, especially inside the crust.
Please, please, please, let the cheese be! Dishes that are cheesy may not be that light or healthy, but they are extremely delicious as they are. I can't think of anything more sad than a "healthy" version of something that's supposed to be succulent and maybe a bit sinful.
I beg you, put the cheese back!
