Booked in advance of our Bruges visit following research and we selected this for our last dinner. Modern and upmarket decor to match the vibrant staff, diners, and style of cooking. Very knowledgable staff who were more than happy to talk about the dishes they offered and at length about the extensive and broadly ranged wine list. Every dish we had was fabulous and the quality of the ingredients and the precision of the cooking shone through. My Steak Tartare to start was the best I have ever had; and the Quail I had as a main course was just exquisite; while my wife really loved the Spanish rice with seafood that she chose. We wanted different wines by the glass for each course and the restaurant was happy to oblige with each one working perfectly; and we finished with the signature "daredevil" dessert to close the meal - a melting middle chocolate pudding served with Roquefort ice-cream drizzled with Pedro Ximenez sherry [one for the adventurous diner - but wow, what a combination!]. A fabulous restaurant and a great way to finish our visit to Bruges. First class !!
