I was worried when I heard that the chef and team had only been in place since January. But I should not have had any concerns. The young Executive Chef Bas van Kranen provides exciting, visually beautiful food that is very very tasty.

The serving staff were attentive and helpful - and are obviously gaining in confidence.

The restaurant was full so the word is out that this young man is a highly creative chef so do try and get a table soon otherwise you are going to have to join a queue soon.

We enjoyed an excellent lunch at this stylish restaurant over looking the canal. The staff were attentive, but not overbearing and were sensitive to dietary requests. The table setting was well conceived, practical and aesthetically pleasing - not overly minimalist which seems to be the fine dining fashion at the moment. The food was exceptional, served with flair and imagination. Expensive, yes, but worth it.

What a place! The view, the food and the wine are great.

This was the second time we visited the Bord'Eau and the first time with the new chef with 1* instead of the previous 2* chef.

We opted for the 'Natural dining' menu and then came the first surprise/shock. No wine arrangement was possible and in 12+ michelin restaurants visited, this was the first such occasion where no arrangement was available. We spoke to the somelier who recommended a wine based on our detailed description and it was unfortunately a disappointment that didn't match our request, and an expensive one at that.

The menu commenced and without exception the dishes were beautiful and full of flavour and they were clearly expertly crafted. The range of flavours and textures were impressive and also the entrees through to cheeses and desserts were all well done so this was no one-trick-pony thankfully. The only fault we could find with the food was the portion size which was on some occasions close to criminally small. A few of the dishes could have doubled in size and they would not have been too overpowering or have oversaturated the tase/texture experience. What a shame.

The service (aside from the wine recommendation) was fantastic and our cheese table expert must have had the best memory in the whole country over a formidable selection.

In summary, forgetting the poor wine recommendation, the food was fantastic and the service lovely, but to leave a michelin star restaurant after a 7 course meal and €500+ spent to still feel hungry is cullinary criminality and frankly unforgiveable.
