Do not try to understand the meaning of the name: waste of time and a well kept secret (pronounce "kookook"). And do not let yourself be deceived by the ordinary exterior appearance of a one of the many kebab fast food joints. Because it certainly is much more than a fast food shop, for it represents the amazing result of a real meritorious and ambitious culinary project: to revive the ancient and noble tradition of the Perusian "torta al testo" (a softer version of the piadina you can find in Romagna). Of course, re-interpreted according to today's taste and to the needs of an informal, cheap, savoury and yet absolutely healthy street food.
Modern and minimalist internal decor, nice black and white posters on the walls, comfortable stools and tables, young, friendly and competent staff. Customers regularly under their 30s, but you will not be annoyed by excessive noise or loud music if you, unfortunately, are older than that.
Torta al testo is what you come here for and all what you will get: served "panini-styled", cooked to order, in all possible variations and tastes. Start with the more traditional (ham and cheese), indulge with a healthy vegetarian one (Grana cheese and zucchinis) or dare to experiment creation and innovation (Scamorza cheese and speck). Soda drinks is what you will probably enjoy with this sort of a food, but I would rather suggest that you seriously take in attentive consideration their limited but wise choice of artisanally brewed beers. Prices are extremely reasonable, especially if you consider the quality and the high level of the offer, which by no means can be compared to ordinary street food experiences. An average torta al testo is 4 Euros. Bravo!
Out of the centre (which it is not exactly bad, isn'it?), but easy to find (Settevalli area, close to the large Volkswagen dealer) and conveniently located for the two most attractive multiplex cinemas in the area. The ideal location for a quick, quality snack. Open 11-23 (closed on Sundays). No phone, but certainly you are not going to call for a reservation, are you?
