We tried getting in at night around 9, early for Spain, and still couldn't find a place.
How it works is that you enter somehow in the tiny place and check with the Red-T shirt owner on the reservation status. If the ETA is too long and you don't have any place at the bar to stand and eat, come back at noon the other day.
We got in at noon and after waiting for around 15 minutes, we got a table. Ordered squid in its own ink, livers in gravy( spicy), pulpo(octopus), sausage in vine(salchicha en vino) and house white wine. With an endless supply of bread, it was a mind-blowing eating experience.
This is the closest you would get to eating the local stuff without feeling ripped off.
Definite spot to visit when in Compostela.
