First of all if you are American complaining about long service you need to travel outside the US more to humble your standards. Most service in other countries is long. Enjoy the atmosphere and stop rushing. The food is worth the wait because it takes time to make. The tortillas are hand made on the spot and are delicious. I highly recommend starting off with a Champorado and trying a Tetelas. I had the De Hongos (mushroom) and also a Tinga Quesadilla. Everyone was fresh and delicious and highly recommend stopping here on your visit to Oaxaca.
