Description: As a real French "Brasserie" we are something in between a restaurant and a bar. A good selection of local and original dishes, not too long but always good, lots of beers and intersting wines, mostly from Aosta Valley. Small place (it's always a good idea to book a table!), just 8 tables inside. You can come as a restaurant client or just to drink something. Kitchen is open earlier and a little longer than classic Italian restaurants.

This place is wonderful. It has that spark that brings positivity in you out. The staff is friendly and speaks english very well. Patrik (manager of the restaurant) is simply awesome. And the food... the food is perfect. The pork shank cooked in beer is probably the best thing i have eaten in the whole valley. So.... the best compliments to the brasserie...

We stayed a week at ski in Staffal Vale d'Aosta. We were recommended to go there to eat by some Italian people who knew the surroundings, although we were accommodated in Staffal, some 20 km away from Gressoney.
Patrick the Chef is simply brilliant and eager to present its menu. Nice starters, like the Goat cheese Italian salad, excellent pork and beef meat, very tasty white beer Grimbergen, nice local wines, and besides all intimacy and funny atmosphere. They cook on order, so if you intend to book a table and have some meat speciality within your menu, you must call in advance and book, so they may be able to buy the meat from local butchers. We've been a funny group of men, so we ate, drank and entertained that little Italian restaurant, together with Patrick and Chiara.
They are closed on Wednesday, it's basically their day off, as they work on Sunday.
If you go in the area for skying or on vacation, The Paul Verlaine Restaurant = Flying Brasserie is the place where to eat a good quality Italian food. The fun is served complimentary.

We stayed a week in G-St-J and ended our week with a meal here. What a great experience! Food is excellent, local dishes with a culinary twist that makes them a little more special. Highly professional yet friendly service. Good wine and beer options. Seems to be a really popular place with the Turin Set who spend their weekends here - must be a good sign. We'd recommend this place for food or aperitifs without hesitation.

Book early - we could only get a table at the third attempt as other nights were fully booked. Food was excellent and the waiting staff brilliant with advice and chat. Plus - not expensive.

Seated in the rear that is decorated like a cave, the menu is explained in great detail to ensure the correct choice by the very kind waitress; I ordered the wild boar with polenta which was lovely, combined with a recommended Shiraz.
For desert a cheesecake with a white grape desert wine.
When we departed the owner greeted and remembered our visit from the previous year; this made us feel very welcome indeed.
We will be back
