Cobia recipe??

When we were in Destin last week we caught a cobia on a deep sea fishing trip. What is the best way to cook it? One of the shipmates said to just marinate it in italian dressing and then grill it....that doesn't sound that great to me....any other ways???

If you like grilled fish I would just use lemon juice and butter. I personally don't care for the italian dressing marinade on any food. The other way is to deep fry it. Cut it in bite size chunks and soak it in either egg & milk or butter milk. You can soak it overnight if you want or just for about and hour if you are in a hurry. Then I use Martha Whites corn meal mix but you can make your own mix with corn meal and flour. Then I add some cajun spice and some black pepper. Deep fry till golden. If you don't like corn meal you can use just flour with some spices. I usually serve it with baked beans and a salad or coleslaw if fried and with rice and a veggie if grilled.

Come on guys....I know you have some recipes!!! Also with our catch we have snapper and King Mackeral.....recipes for those two types of fish would be much appreciated as well!!

katy, i tried typing in fish recipies in the search box and there are a couple suggestions for the kingfish on there. You might try going to the florida keys forum and asking there. Keywest Taxi usually has some good recipies.

I just season it woth Dean & Deluca "Fish Spices" and a bit of butter and grille it.

Fish tast best with minimal amounts of "stuff" on it.
