Personally I dont think it matters what yu are looking for - Derry would always be my choice.

If you are driving the scenic Causeway Coastal Route and will be visiting the giant's causeway, Bushmills Distillery, Carrick-A-Rede rope bridge etc one one day and want an option for a second, I would definitely go to Derry. If you only have one day, I would base yourself in Ballycastle or even Bushmills and explore the Causeway area from there. There really isn't much in Coleraine itself to see - it's more of a base to see the nearby coastal region. Portstewart is a prettier destination. Derry has the famous city walls, tours to see murals etc.
