What venues or churches in Lucca can be used for Protestant weddings?
There is an Evangelical church, Chiesa Evangelica Valdese on Via Galli Tassi, within the walls, though I don't think they do services in English: https://www.luccavaldese.it/

If you are willing to be married in Florence, St. James Episcopal Church (The American Church of Florence) has a fabulous sanctuary and do a lot of weddings. If you are willing to be married in a Villa, send me a private message as I did some research for weddings in Lucca for a friend a few years ago. I am American, but live in Lucca every summer. Ciao.

Another thing about the American Church in Florence is that they have a beautiful small chapel in addition to the sanctuary, they have an outdoor garden area, and they are capable of hosting a small reception in the covered portico at the front of the church. They also have limited parking if you have a car.
