A friend and I like untouristy places and are looking for a place to stay for a week so we can really get a feel of Italian daily life

We spent a month in Mondello, just near Palermo, Sicily and loved it! A beach town for Italians - with some great restaurants. Easy to get to Palermo for the markets and culture. But in January, not sure if it will be too quiet...

Beach towns become ghost towns by November and are best avoided, but January is a good time for cities and cultural pursuits. You would find most of Southern Italy very local in January.

You might consider Palermo, Catania, Siracusa, Ragusa, or Modica in Sicily; Reggio di Calabria in Calabria; Lecce or Bari in Puglia; Salerno or Naples in Campania
