Oates Travel go there on Tuesdays, Thursdays and Fridays.
Best to look at their website. Hope this helps.
I'd definitely recommend using Oates Travel for a trip to The Minack.
No driving - so you can have a glass or two of wine if you want. Reserved seats in a good spot just a few rows back from the stage. Take your own picnic - its part of the fun.
I'd recommend that you book ahead - as these trips do get full up sometimes - especially in August. If you're staying outside the centre of St Ives ask them where they will be stopping. Trips start from Royal Square - but there are then pickups on the way - Porthminster Hotel, Tregenna Castle, Carbis Bay, sometimes Penzance.
As an aside - assuming you enjoy theatre - The Canterbury Tales - staged at The Minack last month - will be on at The Guildhall in St Ives - 17th to 20th August.
Have a great time - a trip to The Minack is always on of the highlights of my summer!
