I would choose the hikes that are more centrally located on the island such as Parkman/Bald Mountain, Penobscot, Norembega or Sargeant.

If you would like to do a carriage road walk rather than a hike, I suggest the Amphitheatre loop from Jordan Pond. Or you can combine a hike and a carriage road. The view from the top of Parkman Mountain is amazing. It's even better than the view from the top of Cadillac in my opinion.

Totally agree - Parkman Mountain trail is fabulous for foliage viewing. Adding Beech Mountain and Canada Cliffs.
