We have visited Sybarita Caffe three time during our January and this month March 2020 stay in Villa de Leyva.service, coffee choices, quality, and knowledge of staff about their different coffee flavors and brands served are excellent.
We have enjoyed the different kind of coffees...we have tried, and loved them.
Hope they continue serving their customer with such professionalism, courtesy, knowledge and smile...

We have already had a demonstration of the cafetera siphon in Bogotá but this one was better explained. You can have the demonstration in Spanish or English. Both coffees we ordered were good: my husband chose the smooth Paché and I had the the stronger...Maragujipe. The passion fruit cake was delicious, too.

By my reckoning, I drank about 30000 cups of coffee in my life, give or take.
Three stand out; the first is the one that I brew myself (evidently!), the other two, the espresso and the capuccino I have been presented with in this coffee...shop.
This place will please coffee connoisseurs and also those that just want a quick Americano. It's like a friendly coffee lab.
On the corner of carreras 9 and 12, just off Plaza Mayor sits a small specialist coffee shop selling the widest selection of coffees...I have seen so far in Colombia. You can choose from an extensive list of hot and cold brews in addition to coffee brewed or filtered in a particular way.
Sybarita uses its own brand of local coffee and importantly, it's excellent. By comparison, I was highly recommended Jesus Martin cafe in Salento but in my view this coffee is better.
Try the cake. This is admittedly the first cake I've had in 3 months of travel so perhaps I am easily pleased. The cake selection is delectable and most people share a slice. I didn't share. The chocolate cake was rich, and not too sweet. It might just have taken the place of dinner.
Once you have wandered around the charming Villa de Leyva, this is a great place for a coffee and cake refuelling.More
