Nice setting, but disappointing service. Food is OK but not worth a star. We ordered 5 Courses tasting menu. 2 Courses very tasting, 3 other rather mediocre. It's a pity to pay so much money for this experience. We ordered a bottle of wine, as...a propasal of the house, but was not available. I asked for a comparable dry wine, they returned with a sweet wine. Not what you expect from a 1 star ranked restaurant. Overall a bad experience.More

Signum restaurant Since we first dined here, 3 years ago, we’ve been going back every year to enjoy the exquisite cuisine of Martina Caruso. This year was not an exception, as food was excellent. Signal restaurant has always made us happy not only with the...quality of their dishes, but also by their well orchestrated presentation. In contrast to a beautifully organized, almost sacred, serene dining process in the past, this year we were faced with a completely different ambience. With the sole exception of a well composed Sicilian senior guy, the rest of the group was comprised of very young waiters and waitresses, who gave the impression, that they were simply and randomly running around, without a purpose and definitely without a “maestro” to orchestrate and direct their movements. We are very glad and fully supportive to see that Signum is a major employer giving job opportunities to a large number of young motivated people. However, lack of adequate training with respect and attention to detail, and absence of senior leadership often resulted in a chaotic atmosphere, including major delays noted by us and other guests (particularly during breakfast: average of 15 minutes for a coffee to arrive). Notable the obsession of constantly filling the glasses with water and bringing more water bottles to sell. Martina Caruso has always surprised us in the best ways possible. However this year, one of her deserts was not worthy of her reputation. The ”pouring chocolate” was a mere disappointment. A very dry brownie, very hard to break with a fork, accompanied by a flavorless ice cream, and topped by the useless presence of caramelized popcorn. All in all, an unfortunate combination of materials that showed lack of inspiration, and perhaps a certain degree of boredom. Although this was meant to be a birthday dinner, it was a birthday dinner without a birthday dessert, as we were not able to finish this dish. We regretted the absence of “saramisu” from the menu this year. To their credit, the staff offered us two small portions of saramisu, simply because we mentioned we loved it! And although a small portion, we were reminded of the explosive powerful memorable taste of this exquisite dish! Through the years the Signum sommelier, with her deep knowledge of Sicilian and Italian winery has kindly introduced us to new tastes and productions. However, it seems to us that in their effort to sell more wine, they may loose focus and not necessarily listen to their guests requests, neither remain as interested in people, who don’t order bottles of wine, but may simply drink a couple of glasses of wine during dinner. Perhaps out of place here, a couple of words on our latest experience of the Signum Bistro. Understaffing (only one hard working person serving multiple tables with multiple guests) resulted in unavoidable delays. Dishes arrived semi cold and someone had to wait for 20-30 minutes for a glass of wine. In terms of the menu, we were unpleasantly surprised by the small portions, albeit priced at the usual Signum restaurant prices. This was in line with an impression formed, that -perhaps- Signum is getting close to a certain level of “fatigue”, not always a good sign for the future of a business or an institution. If not fatigue, perhaps a turn to a more business, money-making orientation. It is reasonable and expected for leadership to organize meetings with potential customers in the beautiful gardens of the estate, but at the same time someone needs to pay attention to the details, which have actually made Signum what it is today.More

Went for lunch. We enjoyed a very pleasant lunch. Not crowded, nice pace, interesting food, very good service. Off season so it was not at all crowded which I think helped the experience.

We had lunch there and without a doubt one of the best, most interesting meals anywhere. The prawns in bloody mary were unlike any I ever had, perfect. The pasta with squid and cheese was amazing, unique and actually dazzling. The numerous amuse Buche just...have to be experienced, I'm not a good enough food writer to describe them. The lemon tart was also unique and superb. I would have to say that the restaurant alone is worth a visit to Salina .More

Please avoid this place. We had booked a dinner reservation way in advance through our hotel on Salina. Upon arrival the staff was very unwelcoming as they claimed they did not have our reservation. We showed the email confirmation in Italian with both the hotel...name and our name on it and they STILL acted as if there was no reservation. After insisted they somehow found our booking and then asked us to wait. We requested to have a seat at the bar while waiting, which was met with displeasure. At the bar we waited 20 minutes for the menu and another 20 for our cocktail. When a couple walked in they were immediately greeted and provided with drinks. We later found out that one of them was the chef… At this point it was around 8.45 pm, our booking was at 8.30. Service at dinner was very messy. No explanations about the wine nor food menu, no proper coordination of waiters, no sommelier, not a michellin star experience whatsoever. We had hoped that even though the service had been bad, the food would he delicious. In conslusion, the dishes were very unbalanced (too salty, or no salt at all), too experimental (combinations that are just not enjoyable), way overpriced, and service was extremely slow (we had our last course out of 4 at 30 min after midnight…). The atmosphere, interior and location of this place are an eyecatcher and quite unique, but dont bother to go have dinner here. Just have drink there, if u have time.More

Excellent food, setting and service as you would expect from a Michelin starred restaurant. It’s on the expensive side for Italy. I had the tasting menu. Generally good but one pasta dish was off (uncooked, cheese too hot, etc.). Overall you can’t go wrong. The...four stars are just relative to the expectations set by the Michelin star.More

You are not thirsty but you want to enjoy a beautiful view in an enchanting location? This is your place. We went for a cocktail. We waited for 1 hour and a half and we left still thirsty. The waiters didn’t even apologize. However... beautiful...garden with Stromboli on the horizon of the beautiful Mediterranean sea.More

We had two delicious evening meals here. Very romantic restaurant, very attentive staff and we enjoyed our evenings thoroughly. We ordered “a la carte” since we’re not keen on massive evening meals. It was all delicious. We only had one glass of wine each. Bottles...of wine always raise the bill considerably. We hope to come back some time!More

We received this recommendation from everyone we knew who had travelled to the Aeolians. The meal itself was not bad but it was very overrated for the amount of hype it received. The tasting menu was incredibly average and lacked consistency and inventiveness. For a...1 Michelin star I would expect much more. Aside from the average food, the environment and setting were lovely. The hotel itself is very charming and we sat outside underneath the awning while it rained. That said, we had much better meals on the island that were more casual but still more interesting. If you only have a few days on Salina I would not waste a meal here.More
