What a great experience. Unfortunately (for the restaurant)we were the only two people there but all of the staff worked every bit as hard as if they had been full. The food was exceptional. Innovative, thoughtful and with a story to tell. This restaurant deserves more customers as the experience was up there with some of the best restaurants I have been to. Special thanks to Oscar for making our evening special.

The experience in this restaurant with a double star: classic and green is fascinating and seductive. The journey through the island's raw materials takes us to three different environments and the choice of a menu without meat (but with fish). Amazing dishes from the aesthetics to the taste to the story represent a taste of local taste and wild herbs experienced by allowing yourself to be surprised. It's worth the trip

This is a restaurant that serves food on a different level. The food here is an experience. Really first class and highly recommended. You eat local food from Spain (not just Ibiza) made locally, with local partner companies. From the water you drink during the food experience journey, to the spices on the food. You have to have this experience if you want to experience good food in a very interesting way as a concept.

We booked this restaurant for a group of 6 friends. On the day we rang to check that the menu would be ok with one of our group who had suffered from cancer and so would need to be careful in avoiding certain courses. Es Tragon were shockingly unhelpful and advised that they would be unable to accommodate our guest and could not offer a single course. We felt obliged to cancel our booking and were even more surprised to be charged €480!! Absolutely terrible!!!!!

So disappointed by the mean attitude of this restaurant. I tried to book it for our family or 5 (including 3 children) whilst in the UK as I read on Trip advisor that it was opposite our hotel. They emailed me back in Spanish saying that I was on a waiting list but still required my credit card. Then... 4 days before our holiday. I finally got a booking because they had a cancellation. I then emailed them to ask if they had a children's menu. They replied and said NO, and the only options were €180 or €135 per person set menu (including children). As soon as we got to Ibiza I promptly cancelled the reservation as I now realised the restaurant was very fancy and not appropriate for children. They then charged my credit card a €400 cancellation fee😱. I popped in to see the manager Elisa and she was arrogant, unapologetic and unwilling to refund (even though I had offered to come back on another occasion with just my husband and no children) . And to top it off we found out they were fully booked so our cancellation was of no detriment to them and just pure financial greediness. We went on to eat in another local restaurant called La Farandula. It was amazing and Children friendly 😍

The only Michelin star restaurant on Ibiza. As a culinary expert I of course can’t resist to take the leap of faith Alvaro Sanz Clavijo worked in multiple two and three star restaurants around the world before starting his restaurant on Ibiza together with hospitality entrepreneur Antonio Gallart. Actually the house we rented is very close to the restaurant so a few days before we have our reservation we decide to walk past by it to take a look. It looks lovely!! The idyllic blue comes back in the windows, the table feet and the frames inside. What also caught my eye is the fresh herbs they are growing themselves. Needles to say i am very enthusiastic to eat here! The dinner night arrived! We got welcomed by multiple staff members who guided us to two tables in a quiet corner in the restaurant which I of course requested to make pictures without disturbing others. We order aperitifs and then we got handed the menu. There is only one menu to choose from and the question is if we take the selected liquid pairing to go with it or not, we decide to do so. Being completely honest; the price is high, even taking into account that we are in Ibiza. I have never paid so much for a menu in a one star restaurant, I hope it’s worth the deal. * see pictures for food review or go to my instagram or website* To be completely honest; for a one star restaurant this didn’t lived up to the standard, we paid over 225 euro’s a person to get allot of so-so dishes , in every course there were some disappointments and that’s not really where I came for. Also sorry to say but the staff their languages skills are way below standards. During the entire dinner we didn’t understand most of the things that the lady tried to tell/explain; I got the memo afterwards by reading the menu and listening to dictafoon recordings over and over again, a bummer because the half of the nicely made courses didn’t came cross during dinner, therefor it lost the magic , the chef tried to create.

This restaurant looks great - exceptionally clean and a lovely setting. The food at this restaurant is not 2 stars either - there were some really clever mouthfuls and the cooking standard was high. However, I am a vegetarian and they just don’t cater for vegetarians at all. My wife spoke to them about a veggie menu when she booked and they implied they adapt the menu and do it all the time. This was not the experience we had. My wife ate 3 courses in a row on her own because they had no alternative. Some courses, which were made up of 4 parts, I only got one of them or they left out whole, critical components of a dish. Michelin star food should be about balance and leaving out whole elements meant this was not the a balanced meal. I was very hungry at the end of a very expensive meal. My advice to the restaurant is just to say you don’t cater for veggies or actually create a veggie menu. What you’re doing means the veggie at the table is bored, disappointed and hungry and the non-veggie is eating alone a lot of the time. Another annoyance, and I read this in a couple of other reviews too, is that they keep bringing you stuff as if it’s included and add it to your bill at the end. It seems dishonest to me not to tell you when something is a supplemental charge. We asked them to book a taxi and they said there were two more courses which we were charged 22.50 total for. If they we had known we would have said no thanks and we were so upset by the experience we just wanted to leave. Finally the bill. The meal is €140 per person. They mentioned on the phone the veggie experience would be less as it misses meat and fish but I actually only had about 1/2 of the menu. They charged me €120 for the pleasure. When I complained they took off a €15 supplement we thought was included. I would never go back to this restaurant as a veggie and I would encourage all other veggies to stay clear too. If your whole party eat meat and fish then I am sure you will have an excellent time.

This was a great place. Especially the atmosphere, the setting, the service and staff were amazing. What was outstanding for a one Michelin star was the mise en place: every dish had a story, the presentation was amazing, the idea behind the menu is very special and driven by local traditions. Not often seen in one star restaurants, this could be from a two/three star restaurant. However, we found the flavours not sufficiently balanced, as several dishes were lacking flavour, while others had a strong unconventional taste.

An experience, because it is not just the food, it is the concept, very clear and elaborate, which makes you have a great time, eating very well explained delicacies. I really liked the idea of changing places throughout the menu. Exceptional attention. Delicious, surprising food. Everything is so thought out, the dishes, the cutlery, the decorations, it is a pleasure. The only thing I noticed is a lot of tension in the cook (understandable due to his level of demand, of course). You can relax, everything was perfect. I hope to return!

At the time of writing there are five starred restaurants on the island. I’d already eaten at Etxeko when I’d previously stayed at Bless Hotel, and out of the other available options I’d chosen this one because the menu sounded more to my personal taste, it was much closer to where we were staying at Pikes, and they also hold the sustainably badge. What a great choice of restaurant - an experience from beginning to end with a varied and very interesting menu. We took our meal with the matching wine paring - there were some which we were familiar with mixed with some interesting surprises. As you’d expect from a restaurant of this level, the service was outstanding and we could not fault a single thing. Pricing is as to be expected for a restaurant of this calibre - don’t expect it to be cheap but prepare to be delighted. One point to note, the tasting menu is an absolute set menu, so for anyone with complex dietary needs you’ll unfortunately be better giving this fabulous restaurant a miss.

Let’s say that we were thrilled to have this dinner for our last evening in Ibiza. When we arrived we were not disappointed with the building and the interior design was great, mixing contemporary design with more vintage objects. We have been called in the afternoon by somebody asking if we had any allergy or specific requirement. We replied that it was not the case. After having been seated the head waitress came with us to start the experience in the wine cellar. Even if the staging to propose the water was ‘too much’ let’s say that it was a pleasant moment where we started to taste some local vinegar and then some local herbs. It was great with interesting tastes. Then we have been asked if we would prefer the long or the short menu but at this stage we have no clear idea of what this means …. Big big mistake … Then we received a small notebook with the different recipes for the rest of the dinner. The hook for the restaurant was ‘Mediterranean cooking revisited’ … I was not ready for archaeological cooking … We came here for a gastronomy dinner as we may expect in any Michelin 1 star restaurant … To give you some insights on the menu ➕ Lamb tongue with fish entrails, eel with a ‘fish’ liver, rabbit with pigeon and meatballs with their interiors, pig’s ear, lamb ham, sweetbread of veal …. On my side I was surprised to see so many organs in one menu since I may enjoy some of them but definitely not for a full menu and surely not when some of them are just awful to eat .. But the worth was coming, my wife did not want to eat some of them. In any other restaurant you could ask to replace it. Here it was impossible and she started to be served with plates having just some small vegetables … Unacceptable and the head waitress was feeling really comfortable with this just mentioning that she called in the afternoon to prevent that risk. Let’s say that it would be more convenient if they were giving some indications of the ingredients of their cooking ? Or should we mention that we have been lucky enough they could have added veal kidneys, oxtail, lamb heart .. We would have revisited all the potential offals … The reality was that it was not good in addition to the way it was prepared. The only one well cooked and well prepared was the sweetbread for all the others the taste was so strong .. Mixing lamb tongue and fish entrails was just awful … When you are visiting this type of place you are coming for an experience. They tried to do it but imagine that for the rabbit plate it's coming on a rabbit fur … Plate after plate you are expecting things to be changed … but no … they continue to serve a 1 cm2 side dish to my wife and the different tastes had nothing great … From a good moment it became a nightmare .. Then you are expecting the dessert or the cheese considering that they will not be able to bring an offal as a dessert … And the dessert is a disappointment as well .. Not tasty at all, an absence of strawberry taste even for a mouthful and for the rest some figs with goat milk and a small almond parfait … It’s just such a pity when you consider the amazing vegetables existing in this region. We had dinners the days before at Essentia and at ES Ventall and I can tell you that there is such a gap in quality in the way they are preparing vegetables. Between the way the beetroot is prepared there and at the Es Tragon there is a world … For us it has been the worth guest experience ever in such type of restaurant. I am really angry considering the average rating in different guides and sites. I was feeling really comfortable going there but I did not read some previous bad reviews ..my mistake ..It seems that this restaurant was even a 2 Michelin star before .. Finally my wife ate the bread with the Aioli inside a garlic clove and the tomato. This preparation was excellent and 2 or 3 others mouthfuls and that’s it .. Not necessary to mention that this absence of service has not been taken into account at the time of the bill … Consideration for the guests should be the first value for any restaurant. It does not seem to be part of their value.

Dear Monsieur Pingard, First of all, thank you for your visit. We regret your disappoitment due to a lack of information. As you could check, we take into account knowing allergies, intolerances or any particular dietary requirements, including any ingredient that, for whatever reason, our clients do not eat. All our dishes have a laborious creative process, based on a search for organoleptic and technical excellence and transmitting with each one of them traditions and stories. As in many other gastronomic restaurants, we can not make changes if all the dietary requirements have not been previously notified. We would have loved to have this information and be able to offer you a better our service.

My wife and I ate here as a special treat during our holiday in Ibiza. It is the only restaurant in Ibiza with a Michelin star and we went with high expectations. The restaurant is beautiful, with both indoor and outdoor seating. Weirdly we were the only people sat indoors despite the restaurant being "fully booked" but that wasn't an issue. The setting was great as was the service. There is a set menu which consists of many small and beautifully-presented courses. We also opted for the paired drinks (not all of them wines - also sherry and even rum) which stretched to nine glasses! We also had aperitifs (cava) and digestifs (home-made liqueurs). The food was spectacularly presented and very delicious, but for me there was perhaps too much emphasis on the presentation. For example, one tiny rabbit dish was presented on a whole rabbit pelt which felt a bit over-the-top. Most courses were sized for only one or two mouthfuls and personally I'd have preferred a smaller number or courses with slightly larger portions, but I appreciate that's personal preference. The price is quite high, coming to almost 500 Euros for two including almost 50 Euros extra for the teas and digestifs after the meal which we had assumed were part of the set menu. Perhaps we misunderstood after the significant amount of alcohol we'd had by that point! Despite a couple of minor criticisms, overall it was a fantastic meal - if you can stomach the price - and one which will appeal particularly to those who value presentation of the dishes.

Was quite impressed with the quality of Es Tragon. The venue is beautifully presented and the service impeccable - the attention to detail is truly amazing. The menu gourmand - 140 Euro per head is very good - hundred of different flavour combinations and centres around Spanish ingredients. I think the team could re-think one or two small elements of a couple of dishes and then the meal would be almost perfect. The ‘picnic’ section serves strong cheese and morsels of pickled fish - tiny mouthfuls but the lingering flavour of the cheese in particular was difficult to get past and stayed in your mouth when new flavors were presented. The last mouthful also - a small chocolate with coriander and goats milk also left a slightly unpleasant taste - goats milk is not for everyone of course but in the spirit of trying all the small morsels presented it was a pity this was the last one ans as such left a final strange taste in the mouth. The most beautiful flavours were the cube of pork as a bon bon, thé raspberry and rose chocolate - divine! Really great place to eat and they change the menu every season so will definitely be back next year for a new voyage of flavours
