Coming from the South, this is not a good representation of barbecue. The meat is average at best and the sides are overcooked, over seasoned and just lacking. The prices are shamefully high.

There is a large selection of barbecue beef and pork, but quite expensive. The meat is good with and the service is at average level.

Huge portions of very tasty food - I can see the point of a previous reviewer who said the the wait staff ignore you - but overall would definitely go again .... and then wouldn't need to eat for the next day

In the past I have visited Hill County's Washingotn DC location. This one is just as good! Great food in a very casual environment. I particulary liked the "burnt ends" and the mac and cheese is also fabulous!

Supposedly great BBQ. Unbearably loud and raucous. The majority demographic screams, whinnies, yells and shrieks incessantly. The waitrons studiously ignore you. I finally asked my waitron why he refused to make eye contact when I seated myself, and he said "we don't do that here."...More

Its not Kruez or Blacks, but it still good. Its Lockhart style BBQ, smoke brisket, prime rib, chicken and sausage. The Sausage is actually from Kruez market.

Hill Country honors the barbecue and live music capital of Texas and takes its "cue" from the legendary meat-markets-turned-barbecue-joints of Central Texas with their distinctive, dry-rub style. All barbecue is cooked fresh daily on premise in our custom meat-smoking room. Our brisket, sausage, ribs and other meats are smoked low and slow over Texas post oak and are served on butcher paper, counter-style by the pound as is traditional in Central Texas.. Updated versions of classic Southern sides and sweets, created by executive chef Elizabeth Karmel, include Longhorn Cheddar Mac & Cheese and Peanut Butter & Jelly Cupcakes. Hill Country features a marketplace full of Lone Star State favorites such as Kreuz Market sausage, Big Red soda, and Blue Bell ice cream. Our bar offers a wide selection of longneck beers, tequila, bourbon, and specialty cocktails as well as live American Roots Music in our legendary Boot Bar most nights of the week
