Surprisingly excellent fare at this informal chef-owned bistro on the highway. The organic greens and other fresh vegetables were of extraordinary quality as was the buffalo burger. The food is mostly all local and the service is excellent. The outdoor eating and drinking is enhanced...More

I had planned on going to another restaurant but upon noticing The Hollar I decided to step in for a late lunch. The menu had some unexpected items on it but since I was pretty hungry I opted for a bison burger. It was delicious,...More

Madrid is lucky to have this destination spot. Food fresh and local. Great people watching with lots of canines and friendly motorcycle crowd. Try the green tomato caprese.

Tired and decided to take the scenic route to santa fe. First, Madrid New Mexico was hopping on a Saturday night. Has a hard biker but laid back feel everywhere. The holla looked scary but interesting. Some real hard coreblues playing in outdoor patio. Just...More

Looks can sometimes be deceiving. The Hollar looks like an old railroad caboose with some structure slapped on and a bunch of tables outside located on a bend of hwy 14 as it slips through the quirky little town of Madrid (pronounced MADrid by the...More

I would call the restaurant directly and ask that question. I have no idea if they do whole cakes or the charge for that.
