I am a French-trained chef, and I have talked to your chef (doubtful he is) on a few different occasions about the soup. The French onion soup, which, unfortunately, I have got to say is some of the worse I have ever eaten. In fact,...Campbell's has a better French onion soup than Rudy's, and I truly mean that. So where do I begin... The onions should be caramelized in butter and garlic with some bay leaves and fresh thyme; Rudy's onions are undercooked, not even close to being caramelized, and hard to chew. The onions are also quite large, and the knife cuts are the worst I have ever seen! If you are going to serve a soup, call it "French," oh, and charge $9.00 for a bowl, then where is the wine that should be added to the onions once they have caramelized? Wine is what gives the soup its depth. Rudy's French onion tastes like you threw some onions into some broth, and OMG, that slice of sandwich bread underneath the cheese, where is the sliced French baguette, which is the vessel for the Gruyere cheese to rest on while the cheese melts under the broiler? The only thing right about the French onion soup at Rudy's is the cheese! You could do so much better. Invest in some butter, wine, and fresh herbs; then, you will have a soup worthy of being called "French" and worth every penny of that $9.00 bowl.More
