The food was amazing, the duck, the mussels, the short rib and the scallops were delicious!! Everything tasted so good! But the service was poor, the waiter sometimes disappear, we had to ask for somebody else to take care of our table.

A great find in Vail. Food is excellent, service was warm and friendly. This is about the 10th time we've eaten at The Sebastian. Joe Callahan did a great job serving us. The chicken over gnocchi was delicious. It was a fine evening.

We dined here with two families and kids over the holidays and were given a private room. The service was excellent from start to finish. This restaurant is so good! Everything we ate was delicious. The short rib with cheese risotto is a must! We also ate the mixed ceviche, truffle potatoes, pear salad and pear and prosciutto flatbread. There is also a kids menu. They ate chicken fingers with cheese risotto. The service and the ambiance was great. I will definitely visit again.

Our server Joseph Callahan was fantastic. Of course on New Year's Eve the restaurant was very busy and several large parties. We had ordered multiple tapas and entrees and everything was fantastic.

We had a great experience on New Year's Eve, our waiter Joe Callahan provided us with excellent recommendations from the menu. The short rib and risotto were delicious as well as the ceviche. Service and atmosphere were great, we will be coming back!

Small plates are the best option in this restaurant although my duck confit was very good. I think prices are just to high in this place.

Staying at the Sebastian and usually not keen on inhouse dining but have now been there twice and stay not over. Have had tapas both times and the octopus is exquisite so hard for the others to compete but they were also standouts(asparagus & Brussels sprouts.) He were staying at the Sebastian Hotel which I truly recommend and we had breakfast for two days at Leonora the waiters are super super nice , they read your mind everything is perfect .
