There is no way to not love their burritos, to not dream about it. That being said, we got sucked up in the worst $2 upgrade/sale for chips and salsa that was a spicier Ragu thing. I ordered carnitas and husband had enchilada plate. Not bad, not great. They are known for their burritos and you will not get disappointed.... More

If, like me, you prefer the super spicy, sorta greasy, green-chile dominated, old-school style of Mexican restaurant, this place can't be beat. The deluxe hot burrito (your choice of filling) or deluxe Indian taco (again, your choice of filling) will leave you stuffed, sweating, and very happy. Sometimes nothing else will do.

We have dined here a few times and we have always found it to be good. The meat used in is always flavored perfect. We like to have the 1/2 and 1/2 sauce because we are too wimpy to have the full heat of the hot sauce. The staff are always pleasant and wonderful.

We frequent Santiago's just for their Breakfast Burritos, and there is even a drive through. I like the halfnhalf chili, not too spicy but spicy enough (allitle medium a little hot) I don't eat there for other meals, just the breakfast burritos! The employees are always friendly and sometimes even have treats for the dog in the truck!

Just OK-not the best Mexican food around. Could definitely use a thorough cleaning. There are lots of better places to eat in Castle Rock.

This used to be the best place in town. Over the last 2 years they have gone downhill - and I mean over the cliff! We have been hopeful that they would improve, so we go in at least once a month. No luck. Food has become very bland to downright awful. Orders are almost always wrong. They have gotten... More

We stopped at Santiago's recently before shopping at the Outlets of Castle Rock. We were seeking a good nearby restaurant and Santiago's was recommended. The restaurant is a small hole in the wall type of Mexican restaurant behind a Burger King, but near the Outlets. Our server was jolly and very accommodating. As far as entrees go, I had the... I've eaten here many times (reviewed many times too) and this was the first time I left with a less than wonderful experience. I've sworn off of my favorite stuffed sopapilla because I can't handle the wheat, so I've been experimenting with other menu items. my husband ordered the enchiladas as always, and I considered them but chose the taco...
