A friend of mine who lived in Boulder has been talking about this place for years. It's his favorite deli and sandwich place and if he was giving this review it would be a glorious 5 stars!!! But I'm writing it and the best I can give is 3. I was in Boulder for the first time and this much... More

Salvaggio's is the real deal. Boars head meats, fresh veggies, fresh bread. It's just all around great. If you miss the brownie while your here then you're really missing out. Go run a few extra miles if your feeling guilty. It's Boulder, right?

No one liner from me—this restaurant requires an explanation. After a conference session, I walked outside to look for a nearby restaurant. I spied two deli restaurants within walking distance. The closer one, however, is experiencing “labor relations” difficulties at least according to a large sign outside the entrance as well as a (I assume) restaurant employee or two stationed... More

They have multiple locations, one on pearl Street Mall, the better one is closer to the University campus. Fresh meats, and loaded with calories.

Pick up a menu and take some time deciding as the choices are many: hot, cold 6",12"subs, rolls, which sauces, which cheeses, which vegies. There are also salads, speciality items and soup. They also serve breakfast sandwiches and have an extensive catering menu. There are at least 2 other locations, but this is the mother store. And feels most like an... More

This is a MUST see place in Boulder. The hot pastrami sandwich on their freshly baked bread is simply to-die-for.

From the name/look of the place, we expected something a little more like a NY deli. Sandwiches were good, but nothing you couldn't get at the Kroger deli. Boar's Head cold cuts on Italian bread. Sides are available but cost prohibitive. Service was good!

Salvaggio's is probably the only place in Boulder where you can get decent deli sandwiches. The roast beef with everything is the best around. Prices are reasonable. The Pearl Street location is take out only, but in nice weather, you can find benches to sit & eat. The service can be a little rude, but after living in Chicago &... More

I've been going to Salvagio's for over 15 years and I'm sad that the bread has gone down hill so much. They've downgraded the quality of their bread recipe twice over the 15 years and it's sad you can't get a good sandwich on NY style Italian bread any more. Everything else has stayed top notch with good ingredients and... More

Bread is good. Meat is Boar's Head, which is terrific. Sandwiches are reasonably sized, but not super generous. Service isn't the fastest, so lines can form around lunchtime. One thing I didn't see that surprised me was the option to add bacon to a sandwich. No bacon?? One star off for that.
