Baco is only about 4 blocks from our hotel in Providencia area of Santiago. We stopped by an made a reservation. The young woman at the desk, the first person you meet there, was sullen and unhelpful. She was also that way when we went to dine at our designated reservation time. Popular restaurant in Providencia. Good wine list, Chile focused. Food is French-inspired. Had a tasty octopus appetizer, and delicious beef bourgignon. They have a nice patio in the back to enjoy the evening outdoors.

Been to Baco about 10 times. Service has considerably decreased over the past months. Once professional service has completely degraded. Past few times 1) forgot my food twice (main course - my real dish was waiting for over an blue), never apologized - asked me if I'd like to wait another 40 minutes. I said no and asked for check... This was the first restaurant we visited in Santiago, open on Sundays, and it did not disappoint. Had our first bottle of the famous red Carmenere Chilean wine. We ate here on New Year's Eve. We didn't have much choice as the city was "rolling up" in anticipation of the holiday (serious business in this country). Had a terrific meal with excellent service. Great ambiance. Packed with patrons. Our waitress recommended the Beef Bourgignone, Beef Stroganoff and the Reineta - all were great choices. The wait staff was very attentive and were very helpful in choosing our meal and drinks.

I had two small dishes and two wines at the recommendation of the waiter and all were far beyond my expectations. I dined at many of the highest TA rated restaurants during my week in Santiago and Baco was hands down the most notable - far beyond other, more popular establishments. The best salmon tartar I could even ever imagine.... More

I went there last night. Be sure to have a reservation, the place is always crowded. It's a fancy but relaxed and fun kind of place, with an EXCELLENT wine cellar and delicious pisco sour.
