Borderless Gastronomy is the breaking of traditions blending international elements, combining ingredients, techniques and ideas from Spain, Italy,France, Japan and South-East Asia for a sensorial experience and intelligent cuisine that defies the norm. "We researched as to what the market wants and subsequently, revamped our menu, and the entire direction, to meet clients’ needs and desires," says culinary-trained restaurateur Edwin Lau. "We learned that diners want greater diversity and brilliant experiences with food." The result is a casual yet chic restaurant and bar that is contemporary, approachable and vibrant. Dark hues dominate the interiors; soft lighting and sleek mirrors and panels, combined with dark earth-toned furniture, the establishment is modern but inviting and relaxing, perfect for an easy evening of drinks and good food with friends or a loved one. The new menu, more adventurous than its precedence, with innovative food and experimental styles specially created by Edwin, will get diners thinking, with what Edwin refers to as smart food.
