如果大家想鋸扒,大家第一時間會想起那兒?相信會很極端,學生哥會想起較平價的老牌豉油西餐廳,就業人士可能會到連鎖的牛扒餐廳,喜歡享受的一族則會選擇到酒店的高級扒房。小弟雖然對食有要求,但只要好食,平貴都無所謂。不過,對Grand Hyatt Steakhouse卻有一種情意結,皆因自從當上博客後,第一次踏進的高級扒房就是這兒,所以印象特別深刻。 如果要證明曾到訪這兒,只要出示秘製的【蒜蓉包】就不會被人懷疑了,比拿出沙律吧的照片更具公信力,皆因他們的蒜蓉包已是餐廳的招牌,在香脆而鬆軟的法包上,塗滿了香草蒜蓉牛油,那份香氣恐怕連不吃蒜頭的人也會吃上一大口呢。 既然是扒房,扒的種類當然不會少,不同國家、部位及級數都應有盡有,然而今次的目標就是引入了全港獨有的美洲野牛身上,它不但矜貴,是美國的國寶之一,營養價值更是非常高,有著豐富的蛋白質,但只含較少的膽固醇,而且肉味更是濃郁。有見及此,先來一個【BISON TARTARE tomato, 12 month aged buffalo cheese】,野牛肉的肉質帶點實身,可是又很嫩口,味道帶上野性原始的口味,配合清新的蕃茄及濃重奶味的熟成芝士,香口又特別。 如果來到這個扒房未食過【Maryland Crab Cakes】,相信會是一個笑話,大膽點講句,是全城最佳也不是誇張。表面微微的脆口,蟹肉一梳梳的塞滿蟹餅內,十分飽滿,而且極為鮮味,令人百吃不厭。 終於來到主角的【BISON Bone in Ribeye】登場,賣相極盡華麗,在原塊的戰斧牛扒上淋上著了火的威士忌,火光熊熊的,燒得略帶焦香,同時,放在牛扒上的香蒜牛油也因熱力而溶化,倍感滋味。 拿上一塊來看,雖不見豐富的脂肪分佈,但卻見水潤幼嫩的肉色,吃來肉味特別香濃,也略有脂香,最特別的是還有陣陣炭香,證明牛扒是碳烤的,說來更為吸引。 另外,還點上了【BISON Short Rib】,上菜時相當神秘,以長條木盒盛著,當侍應打開木盒時,一股輕煙飄出,香噴噴的。野牛肋骨先以慢煮的方法烹調了40小時,致使肉質細嫩,由於用上肋骨的部份,近骨的位置也帶點嚼感,而加入了楓糖來作最後的製作,濃郁香甜,味道豐富有層次,小弟不知不覺間也吃了幾件。 只有肉又怎夠飽,怎少得出色的配菜,有滑溜帶芝香的【Potato Gratin】,也有濃郁惹味的【Macaroni and cheese】,兩者都是既飽肚又美味的配菜。除此之外,【Creamed Spinach】及【Sautéed Beans】都是不錯的選擇,前者濃香滑溜,後者則青脆爽口,兩種折然不同的享受。 品嚐過美味的牛扒後,甜品也是精彩的一環。首推小弟最喜歡的【Dark Rum Baba】,又是另一道具欣賞價值的火焰甜品,輕輕燒過表面後,略帶焦脆兼富酒香,內裡則煙煙韌韌,與忌廉同吃,別有一番滋味。 其餘的三款甜品都很邪惡,由最清新的【Washington Apple Crumble】開始,雖然表面的金寶脆粒香脆膩口,但蘋果餡偏向酸甜,令人不覺膩滯;【Cheesecake】及【Chocolate Mud Pie】兩者都是名物,有著香濃滑溜的質感,論香濃程度不相伯仲,不過朱古力會顯得更為邪惡,非吃不可的一道。 一向以來,小弟內心一直將牛扒放在一個崇高的地位,所以周不時也會去嘗試不同的餐廳,可是今次的美洲野牛的那份原始野性的味道令人難以忘懷,如有機會,真想再次品嚐多一次煙燻野牛肋骨。More

灣仔香港君悅酒店內的Grand Hyatt Steakhouse,向來是身邊不少愛吃優質靚扒朋友們,城中至愛扒房之一。 近日Grand Hyatt Steakhouse引入了bison美洲野牛。據知美洲野牛曾經因數量大跌而差點要滅種,後來經過一段時間特別培殖後,現在數量回歸穩定,又可供再度擺上餐桌食用。 美洲野牛一向以肉質細嫩,肉香濃郁見稱。Grand Hyatt Steakhouse是香港首家、兼目前全港唯一可以吃得美洲野牛的餐廳!當知道這消息後,別說是牛魔王,就連平日不特別算是食肉獸的朋友們都極期待,齊齊要去一嚐美洲野牛的滋味。 吃牛之前,先吃前菜Maryland crab cakes ($320)。絲絲蟹肉餅真材實料,味道鮮美,好吃~ 另一款前菜,選了Bison tartare ($220)。以美洲野牛肉製的牛肉他他,加入番茄及12個月水牛芝士,入口香滑,牛香加入芝士及番茄調味,味道濃郁豐富,相當不錯。連平日不特別喜歡牛肉他他的我也吃完一整口。 主菜大家目標明確一致,就是美洲野牛!先來一款Bison bone-in rib eye ($1480),上枱一刻更會點燃火焰,賣相極吸引。 美洲野牛連骨肉眼牛扒,經竹炭燒及香蒜牛油調味,外層烤得帶點香脆,而肉質細嫩juicy、肉香濃郁,真美味呢~ 這夜以來自法國波爾多產區的Chateau La Serre Saint-Emilion Grand Cru 2007 紅酒($240/杯,$1080/瓶),配對燒美洲野牛。Saint-Emilion酒體平衡優雅,與肉香細膩的美洲野牛個性類近。莓香果香都突出,與濃郁牛肉香很夾得來呢。 而另一款主菜,是Bison short rib ($580)。以長木盒上枱,一拉開木盒,煙燻煙霧飄出來,陣陣煙燻香,視覺與嗅覺先享受。 美洲野牛肋骨配上濃郁甜蜜的楓糖漿,味道酸酸甜甜,惹味! 此外,大家也分享了好幾款side dish,各款配菜都相當美味,絕非配角呢~ 其中我最喜歡就是香脆帶幽幽松露香的炸薯條Truffled french fries with parmesan cheese ($85) 與及滑溜兼帶淡淡荳蔻香的菠菜蓉Creamed...More
