Chef Douglas recently prepared a beautiful, typical and delicious South American meal featuring Red Snapper with fresh herbs and wonderful homemade bread for a celebratory gathering of very special friends! The evening started with THE BEST Cerviche and also freshly made Guacamole served with homemade...chips...accompanied by wonderful Frozen Mango Margaritas. For a nice ending to our meal Chef Douglas prepared wonderful creamy Flan for dessert! He is a master in the kitchen..... prepares and serves everything beautifully and professionally.........and makes it a memorable meal you are sure to enjoy!More

Due to an unavoidable change of plans, Chef Douglas Greene came to our book club's rescue last week. He had 1 day to plan and prepare a menu to be served to 9 ladies! You would've thought he had a month! Upon our arrival, we...were treated with original, refreshing watermelon juice! From the elegant presentation to the taste, our brunch was perfect and especially memorable! It was so impressive that I've asked Chef to cook for a special dinner party. 'Can't wait!More

I had the pleasure of going on at Fort Morgan Cay, Roatan Honduras and chef Douglas Greene handled our dining for the week. I don't even know where to start... not only were we well fed with 3 meals a day, which included a few...appetizers preceding the feast, but there were about half a dozen options for each meal. Every meal was like a holiday dinner. The food was fresh, delicious and I'm pretty sure that I ate a few plates that I'd never even heard of before. Breakfast, lunch, dinner, dessert... you name it and Douglas conquered it. At one point during the week, I found myself going into a laughing fit as he was bringing out dinner courses because it was just so ridiculously beyond expectation. I can't even tell you the last time I ate that well... in fact, this trumps the last 3 times combined that I ate well. Do yourself a favor and experience this man's culinary brilliance!More

Just got back from a week at Fort Morgan Cay with 14 friends and family and Chef Douglas Greene was our chef!!! EVERY single meal was fresh, unique, abundant, flavored with local herbs, spices, and flavors. Never disappointed! Whether lightly battered and fried fresh snapper...or paella or sweet and sour duck soup- every meal was outstanding. I am of Cuban Heritage and my two sons exclaimed that Chefs black beans and rice were best they ever tasted ( it’s true!). Breakfasts were amazing- coconut French toast, egg and sausage frittata, pineapple waffles, and delicious potatoe hash. We looked forward to every meal to see what new dish he’d create. And the desserts- wow - mango pound cake, flan, fried wonton pineapple over ice cream. We highly highly recommend Greene Cuisine!More

We just spent a week at fort morgan cay where Douglas was our chef. He cooked us with amazing meals every time! He even went diving with us to catch fresh fish. He is very creative and talented. Being French and Italian, we can confirm...the very high standard. Every meal was different and full of good surprises, and he is a very nice guy.More

I went to Fort Morgan Cay for a destination wedding, and the food was phenomenal! Delicious flavors, a great variety, and always perfectly fresh. Not only was the food amazing, Doug himself is awesome! I really hope to return to the island for not only...the beauty, but for the food, and great company too!More

My husband and I just returned from a week at Fort Morgan Cay. The food, which was prepared by Chef Douglas Greene, receives all A++++ from us. Every meal we had was amazing, appealing and appetizing with an assortment of dishes to choice. Our evening...meal was always served with candlelight which only enchanted the whole experience.More

Chef Douglas Greene prepared three big meals a day for the nine of us staying on Fort Morgan Cay last week. He is an exemplary, experienced, adventurous chef. Dinners were incredible: a full Thanksgiving meal one night, Italian another, Asian another, and dinner on the...beach with a bonfire for our final night. We ate a ton of local fish--lobster, lion fish, tuna, wahoo--which he or other staff members had caught. Breakfasts and lunch were also delicious, abundant, and fresh.More

Chef Douglas Greene prepared our meals at Fort Morgan Cay this week. Breakfast lunch and dinner were day after day delightful! He uses local ingredients with a wonderful flair, especially the seafood he sources from the local fishermen, and produce from Roatan. We were especially...pleased with his interaction with the diners and his willingness to accommodate their ideas into his menus for the next day. Breakfast to desserts, everything was exceptional. Chef Douglas Greene is a culinary genius! We stayed at Fort Morgan Cay for 7 days of pure paradise where Chef Douglas prepared some of the most amazing dishes I've ever had! He takes the time to find out what everyone's likes & dislikes are...and prepares such flavorful & elegant meals for everyone. I would highly recommend Chef Douglas for any occasion big or small, casual or elegant, you won't be disappointed! He is also such a easy going nice man!
