We love unpretentious one star Michelin restaurants as the rate of really dedicated chefs is quite high. Ti Trin Ned did not disappoint us. As the name says, we found the restaurant 10 stairs down in a nice, simple decorated cellar. We selected a five...course set menu with wine menu and had no problems changing one of the courses with virgin lobster, a favorite of ours. Three different sparkling wines were offered with the Ami. Promising! Three amis were served, the worlds absolute best homemade chips, carrot with tarragon and cabbage with herbs. Great! Then three additional amis followed by another three. And all of them challenging our taste taste buds to stay alerted!
The five dishes were all outstanding with local potatoes with poached egg and Baerii Caviar a creative taste wonder. Excellent crispy veal sweetbreads were also a winner. Ecological chicken was given superb taste with condiments like cabbage and Summer truffles. Spring lobster was good, but, coming from Norway, I fear that we are spoiled by even better taw material!
Actually we were not impressed with the menus dessert being fresh sweet strawberries with cream. But this proved to be as wrong as we could be! A firework of taste. Not the strawberries which were excellent. But cream in two versions: crisp and burnt made this a crescendo finish of a great meal.
The wine menu was good, but surprisingly "flat" as it did not add enough to the fantastic food. The Z Blanc from Ardeche served to the sweetbreads was in our opinion to dominant for the dish.
But the food and the very attentive and positive staff made it easy to give 5 Stars + to Ti Trapper Ned. Absolutely worth a detour!!More
