Where to start? Staff - immensely welcoming, smart and professional. Friendly without being over familiar and obviously well schooled. What a perfect place for a celebration. Quality was superb ; creme caramel perfect, beef was so succulent and tender. very attentive team looking after us and not too rushed and quiet..

It's certainly aiming high, no doubt with a star on its mind. Lovely venue, but a weird / unbalanced menu. All 4 of us chose the same starter and main initially, but swapped a few around for interests sake. Mackerel starter was nice enough. Cannot fault anything about this restaurant except the lack of heating. It is even cold in summer due to lots of stonework and tiled floors. Super dooper in my book. A quality establishment that takes its food (and wine) - and customers - seriously. We decided to take some friends for lunch here. Our last visit was around 2 years ago. We were 4 adults, one toddler and 2 small dogs. The restaurant was very quiet for Saturday lunchtime and one table with a family left without ordering, presumably due to the menu prices and lack of sensible children's options. I've encountered the staff at the Dysart twice. On both occasions they have displayed a distain for customers that I haven't experienced anywhere else! I have tried to make a reservation for my fathers 70th birthday recently. Last time we came in 2011 staff were rude and food wasn't up to scratch. But things have indeed changed and this weekend I was very impressed. Good variety and value for money would sum up the experience. The polite staff were helpful and the decor is pleasant.

When we reserved a table for three (celebrating our daughter's acceptance in to her preferred high school) we were pleasantly surprised to receive an advance call (it is difficult to get a Saturday table so, book early!) and the Dysart Restaurant representative asked if it was a special occasion...glad they asked (delightful, tasty and decorative dessert as a gift from... The Dysart Petersham is family owned and run. Everything about The Dysart Petersham, its initial restoration, approach to food, drinks and service, commitment to quality ingredients and responsible sourcing, concern for tradition, garden, is driven by a guiding family view and firmly rooted in the shared values of Manager, Barny Taylor, and classically trained Head Chef, Kenneth Culhane. Both are constantly inspired and re-invigorated by our beautiful, country, surroundings in this village and the changes it sees through the seasons. They are supported by a wider team, front of house and behind the scenes in the kitchen and by gardener and forager, bringing delights to us at unexpected moments. Both love the moment when new ingredients arrive each day, freshly gathered to influence the dishes. Together, the team is passionate about food and wine, sensitive to the increasing need, understood naturally in earlier years better connected with nature, for ethical treatment and welfare of animals, thoughtful and natural cultivation of plants, the value of old varieties and breeds, the richness that wild herbs, flowers and plants add and the wise use of resources. Both are keen communicators. Both want to make guests happy. Barny is never happier than when showing our nature board, explaining the ingredients, the flavour balances, the cooking methods, sourcing and traditions to those who want to listen - and why a particular wine is so good with them, often a surprising wine, but has the sensitivity from experience to know when guests simply want to enjoy the company, the food, the wine, the hospitality - the occasion.
