Dinner in the garden, under the pergola, wearing togas. Sounds a bit strange but is absolutely lovely. Roman food of great quality. An experience I will never forget (in a good way).

We did not eat here but enjoyed the excellent roman bath experience. Cold, tepid and hot baths and a freezing outdoor pool. The whole experience very interesting and enjoyable.

One of my best dining experiences ever. Between the roman-style reclining seats, instead of there being a table, there's a table-sized pool in which floating baskets of authentic Roman dishes are glided from you to your consort, whilst dressed in Roman garb (which they provide...More

Dinner at Aqua Libera is a delightful experience. The owner is a wonderful host, friendly, helpful, and sincerely interested in her guests and more importantly in the food. The dishes were intriguing adaptations of ancient Roman fare for modern tastes. It is really quite distinct...More

I have for many years jokingly promoted the idea of a restaurant lunch followed by the possibility of a siesta and here at Aqua Libera my dream came true.... When my wife told me she had reserved a 'biclinium' reclining lunch for two, I was...More

A lovely Roman Villa experience in the heart of Spain. Beautifully furnished and painstakingly reconstructed accommodation reflecting what it must have been like to live as a privileged Roman citizen. I particularly enjoyed the luxury of a Roman spa. Many thanks to charming owner Naomi...More

We specialize in ancient Roman cuisine. There are hundreds of Roman recipes, especially by Apicius, but also by Marcia, Columella, Pliny, Cato, Virgil, etc. We also make a vegetarian menu and we adapt to celiac or allergy sufferers. The dishes have a Mediterranean taste, recognizable and exquisite. The right seasoning with aromatic herbs: pepper, laser root, cumin, honey, etc., following the recipes, gives them a special flavour, evocative and different. Served in the triclinium (up to nine diners), in the biclinium (for a couple) or at a conventional table (up to ten diners). At night, we illuminate with Roman oil lamps, which creates a lovely atmosphere and keeps the place free of mosquitoes.
