We were with our sons and daughters-in-law. After a particularly welcoming reception with a cremant from the Alsace with exciting amuses we were escorted to a beautiful round table. What a great evening at Beluga in Maastricht. From the moment we walked in, everything was right. The decor is beautiful – a mix of oriental and modern tones, stylish yet warm and homely. The atmosphere only got better as the evening went on, with music adapting to the increasingly loud and convivial conversations.
The menu started with an aperitif in the first part of the business, a nice build-up to what was to come. The dishes were all masterpieces, not only in presentation but especially in taste. What impressed me was the non-alcoholic drinks menu. After the nice welcome in the beautiful building where Beluga is located, you can have a quiet aperitif at the bar part of the restaurant before sitting down to a table. The bubbles naturally come with snacks and we are served three of them. There is no lack of originality, as we see a macaron with peanut and pickle, Pai Tee with charfish and chili, and a Marigold egg filled with local mushrooms and cheese. Each one is a flavor bomb and therefore a promising start.
We are led to our table in the restaurant hall, with beautiful high ceilings and a view of the water, giving everything a peaceful atmosphere. Chef Servais himself brings the last snack, the Dragon Bread. A kind of popcorn with a nice twist that I won't reveal (this bite is permanently on the menu so be sure to discover it for yourself) - but it does involve liquid nitrogen. In addition to the fun gimmick, another tasty snack.

We really enjoyed eating out at Beluga, Maastricht. As expected in a restaurant of this stature, the dishes are daring, modern, beautiful to look at, but above all fantastic in taste.
We were also struck by the perfect service and friendly, enthusiastic atmosphere. We also received a detailed explanation about the dishes and the wines and very special port served with them. A dietary requirement communicated in advance was neatly taken into account and while consuming my beautifully balanced cheese board, my wife was offered an extra "pre-dessert".

An evening-filling taste experience, taken care of down to the last detail. Upon arrival, sit back and acclimatize in the lounge with a delicious bubble and great and exciting bites. We were then escorted to the restaurant area where there was a nice relaxed atmosphere and the spacious layout ensured that you did not become part of the conversation of your neighbors. Beluga had been on my wish list to visit for a long time. We were in the beautiful city of Maastricht, so we took the moment to have lunch here. We opted for the 5-course anniversary menu with matching vineyard names, and we haven't regretted it for a second!
After a friendly welcome, we took a seat in the 'living room' where we were offered a number of bites and an aperitif and an explanation of the menu and we could indicate any dietary requirements. My dining companion chose the vegetarian variant, I the 'original'.

Greatly enjoyed all the tasty and special dishes. The price quality ratio is top, we went for the 6 course anniversary menu with accompanying wines. Despite the fact that the service was somewhat understaffed because of an ill person, which sometimes caused minor beauty mistakes and there was palpable stress present, we had a wonderful night out. We had an excellent 6 course meal. Beautiful presentation, very tasteful. Staff was very attentive, making sure all the little details were right. When the staff heard about my dads birthday they added a sparkling fountain candle with the dessert. Very much appreciated. We really enjoyed our evening.

Food was really fantastic! Gems on the plate...The service was pleasant and relaxed at first....but as it got busier, they also got very rushed, hectic and there was 'running' through the restaurant. Especially the older sommelier. The story about the wines became shorter and hurried (even walked away slowly a number of times while telling) and this gentleman poured the wine more and more crass and hurried, even with his arm outstretched almost walking away. So that was very unfortunate. Due to the haste and hectic pace, people were not always listening and things were forgotten. The somewhat younger sommelier took a little more time and tried to do his best to tell the ‘wine story’ more calmly. The (blonde young) hostess, only worked there for a short time, but was top! We visited Beluga Maastricht for our anniversary and we really enjoyed it immensely. The dishes were delicious, even for me as a vegetarian with a nut allergy, they did their best to surprise me with something delicious with every dish. The service was exceptionally good and the staff is very nice, friendly, but also professional and they speak with passion about their profession. The food and everything surrounding it is truly an experience. A very successful evening for us!

We were 6 adults and chose the 6 course menu. Received by very friendly and professional staff. We could choose from various tasty aperitifs and were served tasty snacks. Then divine food was served by staff who get 10/10 from us. The sommelier also gave us perfect advice. We all enjoyed it 100% and would love to come back!
