The humble sausage is generally looked down on; when did you last see the Masterchef contestants tasked with making a sausage, or even just a sausage dish? If it's happened, I missed it. But a good sausage is a culinary delight, and the plain ol'...pork banger inspires a weird brand loyalty. My parents swore by the Uplands brand (Kenya), and throughout his life in South Africa my father-in-law used to go all misty-eyed when recalling the Irish-made Hafner's that graced his youthful breakfasts and teas. Personally, I think that the Escort brand in SA is hard to beat (I know of a butchery in Perth that imports what it claims is an exact replica of the Escort spice mix just to please the palates of SA expats!). But, in my opinion, O'Flynn's is close to the peak of the sausage maker's art, at least that branch where they are fried rather than boiled (Germany) or dried (France and Southern Europe). We have tried them at the English Market outlet, and we have taken fresh sausages home to cook, and they really are good, whichever you choose from a good variety. I won't say that Flynn's influenced our recent decision to buy a home in Co.Cork, but I won't say it didn't either!More
