Today, November 25th, I visited Gibson and Company planning to have lunch with a friend. The staff never looked at me, uttered a word or even smiled or a knowleged I entered their premise. There was no lineup so it was obvious I was there....I even asked what the soup of the day was and received the answer ‘Kale’. No, would you like an order to go, etc. Etc., After 15 minutes a table came available and I asked if I should seat myself? The staff behind the counter said she’d clean it but wasn’t to thrilled to do it. I decided why would my friend and I spend $40 on lunch/beverage when no one cared whether we were there or not. Before leaving I approached the man at the counter and asked if he was the owner. He said no so I asked if he would please pass on a message. He didn’t even raise his eyes to me or say sorry for your experience, etc., after I said I was planning on dining her but changed my mind after 15 minutes of indifference and uninterest. I made my comment to him politely and there was no reaction or comment back. It was as if I was talking to the counter. Guess they prefer the few individuals who take up a table for 4 with their computer, phone and single coffee over customers willing to purchase a meal. Will never go back. LindaMore

Food was ok. Coffee was good. The staff are just unfriendly. They clearly do not like working there. Which as strange because they make good tip money for no service at all. Which really just means I am a sucker for leaving the tip. I...walk to the counter to order my food and then walk back up to pick up my food. Then the dirty dishes sit in my table for half an hour until finally someone comes to bud them away and promptly kick me out of the shop because I’ve hit the 90 minute table limit. Enjoy the tip and my $90 in revenue. It will be the last.More

The atmosphere is hip, warm and inviting. The coffee is fresh and good. The pastries tend to be toooooooo interesting to pass up.

Great little spot hidden down an alley way in Collingwood. Enjoyed great chaceuterie and sparkling wine. The coffee looked and smelled great too. The atmosphere was bright and open. The place was bustling with couples, friends, and families on an early Sunday afternoon.

If you haven’t had a chance to check out Gibson & Co, I highly recommend taking the alleyway down to this great little coffee shop and bar in downtown Collingwood. I lived here for five years before I discovered it. Great coffee, delicious food, tons...of vegan options and a full bar. My idea of heaven. I’ve met friends here for a glass of wine and often meet colleagues off site for business purposes. The seating is comfortable and roomy and the staff is amazing.More

Have been multiple times , its got a good vibe , service could be a bit more friendly , cake at $8 a slice is a bit strong , coffee is good, recommended !!

Love to come here every time I am in Collingwood. Cappuccino is great. Had the cheese tray, grilled cheese, and artichoke hummus plate. All very good.

Tucked down a small alleyway beside the Town offices and arena is Gibson's, a fantastic spot for a morning coffee, light lunch, or superb cocktail bar (depending on the hour and your lifestyle!). Specialty coffees and baked scones are on offer along with a light...menu (think avocado toast, etc..) all day along with tapas, cheese boards, etc...as the day rolls on. But come back after dinner (or at any point in the evening) and Gibson's is arguably Collingwood's best bar with a great atmosphere, super wine list, and a seriously deep selection of bourbons. When we are in Collingwood on the weekends, we are at Gibson's at least once!More

We still love it. But I miss some of the friendlier staff that have left. A couple of baristas do not seem like they enjoy their jobs. And our favourite table is usually taken up by someone with a lap top who ends up staying...forever. Our coffee still tastes great no matter where we sit. But we are local locals and hope some of the kids will leave the computers at home sometimes. Cheap office rent I guess.More
