We stayed in Hotel Sierra Silvana next door for 2 weeks and whenever we could and there was availability we went for dinner in "IL FAGIANO" restaurant. The experience was each time unbelievable. The food superb and i mean it. The owner Mr. Vittorio was...incredibly nice to us and the service impeccable. The waiters Tony and Cesario always very friendly and welcoming. The atmosphere WHOW with soft music. We enjoyed every meal and looked out to go there for dinner every evening. We tasted every time something different and had the most fantastic Gamberoni cooked on Himalayan rose salt, incredible.. They have fantastic regional Chardonny wine at €15 the bottle, we paid between €60 AND €85 for dinner which is the normal general price in the region at a good restaurant. Surprising. Try it and i can assure you, you won't be disappointed. But like everywhere in Italy,do make a reservation. Apparently the locals come here for Birthday parties, marriages as it is the Very best and most probably the onlyone of its kind in the region.More

The setting is lovely outside and waiter helpful in translating the menus. The mixed Italian appetiser was fantastic and pasta very good. The let down was the main course fillet steak which whilst tender was so extremely salty , it was inedible for both of...us. The worst part being, when we explained we could not eat it as over salted the lady just shrugged her shoulders. We paid the bill and left. Shame as they could have handled it much better.More

Just around the corner from where we are staying in a fairly vast building. As it was October we sat inside and the restaurant was relatively busy. As a group of 6 we selected the mixed house starters for 2 which were amazing - tuna,...octopus, dried hams, local cheese with quince jam, squid, onion bread, fritata, wrapped prawns. We then had 2 pasta - with truffle & butter then with zucchini flowers, which were both amazing. We then selected an entree each with 4 going for Chateaubriand, 1 sea bass and 1 entrecôte. We selected a white from the Marche and 3 bottles of local Negromano. Bill came to EUR230. An excellent evening.More

These days I tend not to review a restaurant unless there is something exceptional to speak about (good or bad). With Il Fagiano, our recent visit could not go unreviewed because the quality of the experience was, frankly, shockingly good. Shocking, because the restaurant itself...is quite daunting - a large house in a smart residential neighbourhood, double height ceiling, so not at all cosy, but instead, just impressively grand and beautifully appointed. I was expecting a lot of froufrou nonsense, instead we got one of the most professionally delivered meals Ive had in a very long time. A menu in Italian only really tested our language skills, but no matter, everything we tried was simply first class : pasta, wine, puddings and coffee. Best of all however was the service. The young gentleman looking after the midweek restaurant (comping a party of about 18 local business types, plus ourselves) was simply great in every respect. The whole meal was a great experience and the price? : shockingly good value (would have merited 6 stars). The highlight of a week's trip to Puglia.More

The food was very nice. Truffle spaghetti - excellent Vegetarian spaghetti - good Steak tagliata - good Truffle steak - ok Desserts - excellent Also did a great Aperol spritz However service was slow as there was only 2 waiters for 4 tables and the...kitchen is far from the tables.More

humbleness and professionalism makes Il Fagiano one of the best catering&banqueting company for events in Puglia. I've been in their restaurant in Selva di Fasano several time for wedidng tasting with couples for everywhere in the world, and everytime I had happy couples who enjoyed...the food and the hospitality of the whole staff. Silvana, the owner, guide an amazing team of close-knit great people: everyone works hard and always with a smile. The service is impeccable and the kitchen amazing. The chef is able to create simple yet original combination of local ingredients, for amazing dishes (especially primi piatti!) which can accomodate every desire.More

We stayed at the hotel next door and had dinner here for a change . The surroundings are beautiful and the food wonderful but the service was very slow and as we were the only people in the room there was no ambience, some background...music would have been nice. We were a party if four and luckily make our own atmosphere. We were there for half an hour before someone took our pre-dinner drinks order. The restaurant caters mainly for large parties and weddings and as there was a party there that evening we were left alone. The food made up for this it was superb.More

We have just returned from a week staying next door to the restaurant at the Sierra Sylvana hotel in Selva di Fasano (a nice enough hotel which is extremely clean) and were bowled over by the delights of Il Fagiano. The restaurant occupies a handsome...large villa and is blessed with a series of elegant dining areas - beautifully decorated and furnished. The service was excellent - friendly and helpful but in no way overbearing. The food was a dream, whether ordered or just appearing as a 'little' extra, and minor variations to the make-up of dishes to meet one's preferences or appetite were accommodated with pleasure. For our second and third visits (there would have been more had it been open on Monday and Tuesday), we left the choice of wine entirely in the hands of our excellent waiter - a move which did not disappoint. We recommend Il Fagiano without reservation.More
