Cook Japanese dishes in a home kitchen. Is Japanese cuisine one of your favorite things about Japanese culture? If the answer is yes, this is the experience for you. In this workshop, you will learn about Japanese home cooking and the way of matcha green tea. You'll cook in my home, and I'll give you all my recipes at the beginning of the class and share my tips with you. We'll begin by preparing dashi, a soup stock that is at the base of many Japanese dishes. You'll use it as you learn to make miso soup, cucumber citrus salad, nikujaga - a meat and potato stew, and kakiage tempura sauce. The dashi will give them all a rich, deep, and delicate umami flavour. I will also teach you how to make crispy shrimp and onion kakiage tempura, which goes so well with the sauce, aburi-mochi cake, and a cup of matcha green tea. I will demonstrate how to make the nikujaga and how to boil rice, and you will participate in making the other dishes yourself.
