I don't know any nearby tavernas that do the dancing. I know there is one up in Zia that they organize Greek nights but still they don't do the plate smashing. That was greek tradition long time ago but due to health and safety they stopped it.
The only waterpark that exists outside the big hotels that some do is LIDO which is outside Kos town. You can get a taxi or a bus to get there.
I can't recommend a boat trip because they change their schedule every year and their entertainment. Usually the three island tour is good but you will have to talk to the the people on the boat for what they offer (BBQ, diving, dancing).
