Shalai resort has figured out how to serve their customers from both the front and back of the house. The front desk staff was exceptionally prompt, professional and flexible when I needed to adjust my bookings. This was followed by an outstanding meal in their Michelin starred dining room. The wine card arrived to the table as a large , albeit overwhelming list. The server arrived with a fantastic knowledge of the wines and suggested a perfect bottle of Sicilian wine which aligned to our description of flavor profile. The meal itself was perfect and none of the courses in the tasting menu disappointed us. My friend ordered the “meat” option, I chose “fish.” The kitchen allows you to pick different menus which is also a nice touch. I’ve been many places where the tasting menu is a must for the entire table. My favorite dish was broken angel hair pasta in a fish broth with local red shrimp. The shrimp tasted similar to top quality sushi grade ami ebi. Breakfast the next morning was included in the room price and had a wide variety of food on offer : pastries, fruit and optional cooked dish from the kitchen. The rooms were minimalist in style as shown on their website. For the price point, they were exactly what I expected to see. I will be returning to the property during this same stay in Sicily for 2 additional nights. I would not hesitate to recommend it for its great service across the board and high quality food.…
The restaurant is wonderful and highly recommended. We all had the pescatarian tasting menu which was fantastic. However, the hotel could use some work. In particular, no one in our party ever did get hot water out of their showers; the water wasn't cold, but it never got hot either. The rooms are a bit worn out as well. We also tried to order breakfast off the menu in the morning but after an hour waiting for eggs, we gave up in order to catch flights out of Catania. Worth a stay just for the restaurant, but the hotel seems to prioritize the appearance of luxury over practicality.
I recommend to anyone who wants to have a culinary experience in eastern Sicily to go and try the tasting menu of the starred chef Giovanni Santoro, able to express the splendor of Sicily with his dishes,Excellent raw materials entrusted to the skilled hands of the chef together with his staff make this location a must-try stop for all lovers of haute cuisine. Highly trained staff, excellent wine list .....
This hotel is in a charming an old villa. The space retained much of the old character, like an amazing painted ceiling in the large parlor on the second level. The rooms are modern and comfortable. The breakfast was wonderful and the service was friendly and helpful.
We stayed at this marvelous jewel run by Leonardo Pennisi, who we knew from Bar Sympathy. The food, attention to detail and the effort placed by every member of staff is a magnet for the guests. We are already planning our next visit. Leonardo and team helped us plan winery visits, trecks on Mount Etna, beach bookings and bike tours. The beds and rooms are very comfortable and the attention placed on lighting features, furniture and overall finishes belongs to a 7* hotel. The little hotel restaurant is outstanding, the tuna carpaccio is not to be missed. Highly recommended
The surroundings to this hotel are very depressing. It has been a prosperous and beautiful town one hundred years ago. Nowadays it is simply falling apart. In the main street not far from the hotel there is the rest of a house with a big tree inside. This means that the roof disappeared for more than 20 years ago. The hotel itself is in a very nice old building, which is in perfect condition. There is no lift, but you can get help from staff of carrying your luggage to your room. These are large enough and, and with a shower, which I always prefer. The whole hotel is decorated in a very modern way, which is not to my liking, but OK. It was probably in a very bad shape when it was renovated, and they have squeezed in two stores in something what probably was just one store. The breakfast was good since you could order omelette and other stuff beside that was set. The staff was friendly and nice, especially a young beautiful girl.…
Excellent quality accommodations including a wonderful restaurant. We would highly recommend this option for its location and service. The town is a fun place to walk and Mt Etna is a short drive. The dinner we experienced may be one of the best we had on this trip.
Shalai resort is a very fine place in Linguaglossa. I ve been there both in summer as a refreshing place next to Etna and in winter when I used to come back from skiing. The rooms are lovely, the shower is super elegant (sometimes I dream to have a similar one), the spa is not very big but it s accessorized with the most important things even if the table in the spa used to offer juices sometimes ago and now they dont. People are kind and ready to help for everything. And then....the breakfast is simply perfect!
Shalai was recommended to us and we were not disappointed. It has a Michelin star restaurant which we did. To try as we were only there for one evening and wanted something simple. There are 2 restaurants just 50m down the road and a very easy walk. It was great being able to get parking next to the hotel which was free. There is also a Spa. The decor is great, rooms comfortable and staff without fault. I think it is a great place to stay.
We stayed in the Shalai Resort for our final five nights in Sicily. They were extremely welcoming and our room was spotlessly clean and very comfortable. The food is exceptional - we ate dinner in the hotel for two nights and were extremely impressed by the chef's high quality of cuisine. Linguaglossa is a delightful little town on the northern slopes of Mount Etna and far less touristy than the southern slopes. There are one or two other good restaurants locally, and the Tourist Information office is very helpful - several of the people there speak good English and were very helpful. They also have a small museum - with artisanal interest and also good examples of geological specimens - eg lava bombs - found on Etna.
