To go to central London, take the tube: you will have to change once, most likely Hammersmith station, depending where you are going. From the hotel, you can take the bus back to the airport but I am sure there are buses to the second or third stations of the tube. Ask the tourist office at the airport when you arrive: the hotel staff is not local and will not know. Also they try to sell you a limo service which is slow and expensive.
Yes, the oyster card will cover all: for 3 days you will probably need 15-20 pounds. The trains run from around 5 a.m to late at night.
