We had an excellent stay at the Squam Lake Inn. The rooms are very nice with great attention to detail. Nicely decorated, comfortable bed, and quiet. Great location. Restaurant is excellent with creative, flavorful dishes. Overall outstanding.

Yes, you will see lots of foliage at the Inn and the area around it. Aside from pine and spruce trees, all the other trees will change colors and everywhere here is wooded. It is difficult to predict the best time for the foliage change but early October is the safest bet. (It has been spectacular this year - one of the best in my memory.) I would recommend the first week in October as Squam is further north than where I live (in central Massachusetts) so the foliage changes a couple of weeks earlier. I prefer it when it is starting as you see a better contrast against the green of the trees that haven't changed yet.
You should take a cruise around the Lake from the boat landing, a 5 minute walk from the Inn. It is run by the Squam Lake Science Center, also a very nice place to visit. I'm not sure when they stop the cruises for the season but I imagine it goes until mid-October. The lake cruise is a lot of fun and I imagine it must be fabulous when the foliage has changed. (Go to the Science Museum and get a combination pass to the museum and the lake cruise (save $6.00 USD).
The Inn is a wonderful place; very cozy and welcoming. The restaurant is very good for both breakfast and dinner. Walter's Basin is another good restaurant and a short walk from the Inn.
I assume you will have a rental car so just drive around to see lots of foliage. There are a lot of lakes and mountains in this area and the sightseeing is great. There will be a lot of traffic as it is the most popular time for visitors but relax and enjoy it. I suggest you book the Inn (or wherever you plan on staying) as soon as possible.
